Brisket Birria Tacos

- Traditionally made with goat - birria tacos are insane!
This is my (unauthentic) version made with leftover brisket. You can use any cut of beef/goat you want. Just chop it into 1x1" cubes and brown it off in a pan first if you're cooking from raw.
This is influenced by the Birria often served from trucks in LA, and its just a way to make something delicious out of leftover brisket.

Ingredients I used (can be adapted - try it out and add more of anything)
500-600 grams leftover brisket
4-6 Dried chillis (guajillo, ancho and chipotle)
1 medium onion
6-10 garlic cloves
2 bay leaves
1 stick of cinnamon
1 tablespoon ground cumin
1 tablespoon ground coriander
1 teaspoon of Mexican oregano
1 teaspoon of ginger
1/2 teaspoon of white pepper
1 teaspoon of smoked paprika
1 teaspoon of ancho chilli flakes
1.5 teaspoons of salt and pepper
1 teaspoons chipotles in adobo sauce
1 teaspoon ancho chilli paste
10 corn or flour tortillas (I prefer corn)
500 grams of shredded cheese (Mexican cheese would be best)
1/2 white onion diced finely and a small bunch of fresh coriander

Looks great bro, nice spin on Quesabirria tacos. A tip I do is always flip your tortilla so the inside cooks and crisps a bit. Then put your cheese on first, then your meat and fold. I find the cheese hugs the meat and keeps it in place. Lol Cheers from Texas.

You guys are aware that Texas was part of Mexico and many of our traditions are Mexican traditions
@@afroshined actually it was part of Spain, then New Spain, then finally Mexico. And the word Texas came from Tejas from the natives meaning friendly. And yes, I'm fully aware since tacos were developed as a way to eat the corn (tortillas) and added meat that was cooked, so it prevented spoiling. I'm not dismissing that at all, but it didn't get popular in the U.S. till the border states started mass producing them and Tex-Mex was introduced from here that they started a new cultural/folders revolution. But yes, yall are right. But I was just pointing out the popularity through the region. Kinda like Chilli con Carne and queso
What is fascinating is that Birria actually came from the Jalisco County and they used goat and Birria meant garbage tacos. But it became a delicacy. And now, with the Consume, it is considered one of the best tacos in America, yet still the worst for healthy eating. I'm not locking the origins or the Latino influence or origin of it.

For the brisket, after smoking it, how long can you keep it in fridge till you do this? Or can you freeze it after cooking it for this?

Pretty much indefinitely if properly vacuum sealed! However, the recommendation is 12 months

One of the best parts of being American is Mexican food! 🤣
What is the purpose of diluting the stock with water after removing the meat, just to boil it and reduce that water off? Why not just add the extra ingredients to the stock once the beef is removed. Adding water then just boiling that water wont really change the flavour as you're not adding an extra ingredients which will break down and add flavour/texture/body during that cooking time?
But still - going to make these tomorrow!
Because once you remove the meat, there isn’t nearly enough liquid in the pot to make for a number of bowls of consommé. It’s also very very strong and needs diluting. Once the additional pastes are in, and it’s cooked further there would hardly be any liquid left - hence topping it up with water and cooking for a further hour
