how can NH3 be an acceptor, because H conditionally gives the 3 electrons needed for 2p³ for the octet. Why does N take another one?

why does some of the waters have 2 lone pairs and then others have 4 lone pairs?

All the water molecules should all have 2 lone pairs on them. So the two on the left side at the start are drawn incorrectly with just 1 lone pair. Sorry for the confusion. ♡
