Often times, when we're making dumplings or wontons, since the process can be tedious, we'll make more than necessary and freeze the extras for quick cooking later on. I live in a landlocked state in the US. The sign at my grocery says “fresh, local, ocean seafood” and I am wondering what they consider “local” considering the ocean is a good 14 hour drive away at least
Pretty much the only commercially fished seafood that isn't frozen onboard the ship is the premium stuff that's going to be sold in the fish market in the home port that day. If it makes it all the way to a supermarket, it's already spent some time frozen no matter how close to the ocean you are.
As an British pakistani our freezer is loaded with frozen samosas and spring rolls for quick snacks or for when guests would come over precovid. Before ramadan we tend to come together and make loads and then freeze them ready to fry each night of ramadan to break our fasts with.

Frozen Spinach - Also cutting down on plastic waste, because you've got 900g of frozen rather than 100-200g of fresh that you're going to buy more often so that's 3-4 fewer plastic bags you're using. As it's going to be very rare that someone will buy and use up a 900g bag of fresh spinach

When I make a load of pancakes or waffles on a weekend, I freeze the extras. Then, I can pop them in the toaster for a quick morning meal! Its a fun trick, and the toaster makes it crispy on the outside, fluffy in the middle.
Frozen dumplings are in a way, also traditional! When I moved out, my dad would make a huge batch of dumplings, freeze them (on a tray so it doesn't stick together), and bring a giant bag of it over to my place every other week. I always have frozen dumplings in the fridge. Good for not only boiled, but also steamed, or pan-fried (steam in pan for a last few minutes for pan fried). Some good dumpling houses also sell bags of their own frozen dumplings.
Savory pizza 100%. I've never said to myself, "Oh boy, a sugary Calzone sounds like a great idea right now!" Give me that pepperoni, bacon, and onion, that sage sausage, mushroom, and pepperoncini, that salty, gooey, cheese deliciousness!
Frozen food is actually healthier in a lot of ways. They are frozen within just a few hours of being picked, so the vit.s and Min.s are kept far fresher.
Living in a landlocked state in the US, the only way we get most seafood is frozen even from the counter at the grocery store. They have to indicate that it was previously frozen. Loved this episode as I have a small chest freezer and try to keep it stocked.
I sold seafood at a Fred Meyer for about 3 months in the Seattle area. We carried 1 fresh fish, think it was Sole fillets. Everything else behind the counter was identical to the products in the freezer 5 feet to the side. Unless something specifically says Fresh, just buy it frozen and defrost it at home.
@@sshishegar there are all sorts of things we don't realize until the broadside us. Example: I'm in the Midwest, and I was confused by someone complaining thier AC wasn't working last week... Loved this episode. I stock most frozen vegetables, mixes and single type like spinach because I waste significantly less food this way as well as just having some prechopped veggies to add as a side dish. Also meat, because its cheaper to buy large quantities. I also freeze portions when I make large quantities of something for my own freezer meals (soups, stews etc..) pesto freeze really well too. Pre-prepped freezer meals or more hacks like this please.
Ironically, I discovered TODAY that a dumpling place that I've been wanting to try for AGES (but, y'know, plague times) sells their in-house made dumplings frozen, and I'm planning to grab a bag as soon as I've cleared some freezer space! (I live alone and have a pretty small freezer, but I'll always keep chopped frozen herbs, a few homemade "ready meals", spinach, chopped celery and a bag of some kind of chicken pieces kicking around in there. The herbs are great for when you're cooking for one and can't keep things alive to save your life; homemade portions of food for evenings when I get home from the lab or work late; spinach the lads have talked about today; celery I love in soups but hate in everything else, but I will not throw away food, so it's kept in the freezer until soup is on the menu again; and a bag of chicken legs allows you to buy a better-treated chicken for less, since the legs are a less popular part than the breasts AND it's perfect for everything from soups to a one-person-roast!)
I only have a couple of drawers in a fridge freezer, I would struggle to find room for the everything in the video, it seems one packet of fish fingers and few portion of home made stuff plus a small tub of ice cream and that,s it, Good tip about the chicken legs
@@deprofundis3293 I'll freeze whole sage leaves, tarragon and the likes which I have to buy fresh. But where I live you can also buy common herbs like parsley and chives chopped and flash-frozen in little paper boxes, which I usually keep on hand. Little freezer hack for open packets if you don’t have anything to clip them or whatever; Cut off the top width way then when you’re done with the bag bunch the open top together and wrap the cut off bit around and tie it in a knot to keep it from spilling, it works wonders!
The package is wasting, the frozen food is also selected so a lot goes to waste, and even to bring it over from far it's wasting. But it's like Ben said, if you're going to have it once in a while it's not all that bad. But best thing for zero waste is to buy local source food, even though it's limited.
Yeah I always thought that part was exaggerated. My family catches our own fish and freeze some for the off-season, I wouldn‘t recommend freezing smoked fish but otherwise wouldn‘t say I‘ve noticed any differences in taste. 🤷♀️
As someone who cooks for a one person household, my freezer is indispensable! I have frozen ingredients, some pre-made foods, and lots of servings of food from big batch cooks. Frozen foods (whether they're bought frozen, portioned out as fresh ingredients then frozen by me, or something I made myself) are really great because I can pull out only the amount I need without compromising the rest.
Oh, I have my collection of straight-from-the-store frozen fruits and vegs that I use when cooking, baking, and for frozen desserts: Bell peppers, carrots, broccoli, green beans, onions (no tears!), oranges (peeled), bananas (peeled), grapes, blueberries, etc!
I really appreciate that you consider the single person when talking about the pros of frozen food. It is so hard to shop for 1, and I like that you talk about other ideas on how to spin these ingredients
Hi there! Cook here with more experience working in a kitchen professionally than not! I wanted to weigh in a little on my frozen choices, in the case that anyone cares. My main go-to in the frozen section is baguette dough. Usually they come already shaped and ready to be thrown straight into the oven, but you can also get bread dough or something like that and shape it much like the pizza dough in this video. This is a great hack to just have something quick and easy to add on to a dish. Quick garlic bread. Quick cook sandwich. A vehicle for flavor. It won't always be as good as fresh baguettes, but they are great to have as an "Oh, what should I do to make this pasta less basic?" or so on. This next one is more for my fellow Norwegians as they would know what I am talking about more. In Norway we have a leftover dish just called 'pytt i panne', which is at its general core, potatoes, onions and sausage/ham, in a frying pan. In most freezer sections you can get a variety of things needed to make that, such as big kilo bags that contain all three, or what I like to buy, a bag of frozen potatoes that are already boiled, and chopped in paysanne (small cubes). This is a tremendous hack for potetball or blandaball. You can roast them, or fry them to add texture to a plate, small and individually frozen so you can very easily figure out portion sizes. Absolutely love these things. Another thing I love that might not be as available in the UK, is reinskav, which is basically reindeer meat cut into pieces of various sizes. Easy to get and quite affordable reindeer meat, amazing in pitas and in stews, and very hard to get in other forms. A great thing to stock up on.
I Would love to see a pass it on where you try to make Jamie's Paella Burrito (only revealed to the first person) it would be so funny and the order is all up to Jamie himself.
Wait wait, make it a pass it on. The first person is told they are making Paella, the second person gets told they are making a paella burrito and then Jamie goes last and has to actually roll and plate it. Making it his worst nightmare.

Spinach, corn, pees, asparagus, minced meat, etc., are all frozen ingredients that I use several times a week for all sorts of dishes. Tinned and frozen food are so underrated and brillant !!!
I love frozen fruit for this reason as well! Works great in smoothies and in breakfast granola, I recently discovered peaches stay firm even when defrosted
Barry: "I swear on frozen pizza dough!" Jamie: "Why don't you make your own pizza dough you lazy sod?" B: "When's the last time you made your own?" J: "Saturday!" Of course, those arms look like they kneed different type of doughs all the time... If your baker doesn't have arms as Jamie does - don't trust them, the dough is barely kneaded.

@@kitkatjames3558 no, a good baker of any sex can have thin arms, but I'm sure there are some quite strong women that would debate 'not getting muscle as easily'
@@FirstNameLastName-rh6zc That would be assuming that all people of a given sex have the same hormone levels, just to start. The disparity is hardly so large that it's "a heck of a lot more" than guys. Can we get more of this? Learning about frozen spinach was eye opening and stuff that can be cooked from frozen does help with my anxiety around cooking. Would love some more ideas! c:
With fresh spinach I've also found that unless you use all of a packet at once (I dont know about other countries but round here it's generally only available in fairly large factory-packed baggies, like salad mix), you're unlikely to get to use the leftovers before it goes off. Spinach, especially if at all bruised, goes off quicker than a raw prawn on a windowsill.
Always freeze bread when I buy it. Usually takes me 6 weeks to go through a loaf as I don't eat it often so freezing it means I can buy a decent loaf and not have to eat it all within a few days
Tip: If you're located in a coastal city/state (like much of the US population), there's a good chance that there's a wonderful local seafood business that is usually run by really passionate people who love talking about how to cook fish, sustainably caught fish, and probably has quite a few frozen options available.
Much of the US population? Only 19 states even touch the ocean and the vast majority of those states just barely do so. Even states that do touch quite a bit of water like Texas the vast majority of the population in the state leave hours away from the coast. Not everyone lives on the coast mate.
@@bradyp8868 then disregard my tip? If you don't live on the coast, supermarket is fine, the wonders of the modern day supply chain are incredibly impressive. But if you live in an area where you can support local businesses it helps foster community and is more environmentally friendly since the fish comes from much closer (and many times is comparable or better quality).
@@kittykatinabag I gotcha, just pointing it out cuz you're comment made it come off as though most Americans live on the coast lol. But I agree on the buying local, same goes for farmers markets, furniture, etc. Sometimes thing like furniture can be more expensive, but locally made stuff tends to be better quality and you're helping the community out instead of some corporation.
The Monterey Bay Aquarium has a number of seafood watch lists including a sushi list that helps people choose which are sustainable and which to avoid. It is probably available on their website. Chopped has done an episode on that in the past.
There is a show like that on Netflix! It's called Best Leftover Ever.

I live in a landlocked state in the US. The sign at my grocery says “fresh, local, ocean seafood” and I am wondering what they consider “local” considering the ocean is a good 14 hour drive away at least
They meant Lo(w)cal(orie) obviously.
Pretty much the only commercially fished seafood that isn't frozen onboard the ship is the premium stuff that's going to be sold in the fish market in the home port that day. If it makes it all the way to a supermarket, it's already spent some time frozen no matter how close to the ocean you are.
We have a shop in my town that trucks seafood up from LA daily. It's been flash frozen on the boat, of course, but it's very quality stuff.
There in the Outer Hebrides local seafood is truly local - I can see the mussel farm from my kitchen window :)
Well it's definitely local where it's been caught. Just not where it's sold. /s

Its good stuff. And the frozen chopped spinach is great for hiding in kids pasta sauces as it looks like herbs and is one of their 5 a day.
This just made me realized how often we eat spinach :D My mom buys kilos of fresh spinach from the farmer's market and we go through it in a week.

Living in a landlocked state in the US, the only way we get most seafood is frozen even from the counter at the grocery store. They have to indicate that it was previously frozen. Loved this episode as I have a small chest freezer and try to keep it stocked.
This is really ignorant of me but I live in Los Angeles and it honestly never occurred to me that some states can't get fresh seafood
Yes. And frozen will usually be higher quality than the fresh for those of us living hundreds of miles from a sea.

Do you freeze your own herbs? Which ones do well?
@@deprofundis3293 I'll freeze whole sage leaves, tarragon and the likes which I have to buy fresh. Little freezer hack for open packets if you don’t have anything to clip them or whatever;

"Frozen food means zero waste"
You underestimate my ability to microwave too many bagel bites
You underestimate YOUR ability to keep shoving them in your mouth.
there is no such thing as "too many"
You underestimate your ability to eat them. If you throw away bagel bites you should be put up for crimes against humanity.
Even in the packaging they're already a food waste
The package is wasting, the frozen food is also selected so a lot goes to waste, and even to bring it over from far it's wasting. But it's like Ben said, if you're going to have it once in a while it's not all that bad. But best thing for zero waste is to buy local source food, even though it's limited.
"I couldn't tell that was frozen if it were served up to me."

Yeah, but it's FRESH frozen!
Yeah I always thought that part was exaggerated. My family catches our own fish and freeze some for the off-season, I wouldn‘t recommend freezing smoked fish but otherwise wouldn‘t say I‘ve noticed any differences in taste. 🤷♀️
I’ve noticed he often orders the same stuff, I bet that’s the selection of food where you can tell. It’s always oysters or something like that
That’s exactly what came into my mind when I heard him say this😂😂
Ebbers is looking well these days!
Would love more exploration on frozen/ tins on the channel.

I wonder how many times Jamie has had to watch Frozen...
Not enough
Enough that he knew what he was doing with "Into the Unknown"
Barry clearly hasn't watched it enough to understand the reference
bold of you to assume he hasn't done it willingly
"And that pizza is perfectly circular! Shame you're gonna fold it"

I Would love to see a pass it on where you try to make Jamie's Paella Burrito (only revealed to the first person) it would be so funny and the order is all up to Jamie himself.
No jo, Jamie should he last and then we get to watch him freak out when he sees the paella there and tortilla wraps next to it
Wait wait, make it a pass it on. The first person is told they are making Paella, the second person gets told they are making a paella burrito and then Jamie goes last and has to actually roll and plate it. Making it his worst nightmare.
@@NaraShikamaru21 hehe make it an April fool on Jamie the rest know the score he's just left in the dark and he aint told till after the wrap up when they can all laugh at him
Better yet, a Pass It On based around using frozen ingredients
I use frozen stuff as much as possible, as it is usually more fresh, it tastes better because the flavour has been saved when frozen, it is usually cheaper in Denmark, and it is easy to work with. Spinach, corn, pees, asparagus, minced meat, etc., are all frozen ingredients that I use several times a week for all sorts of dishes.

Jamie: "Why don't you make your own pizza dough you lazy sod?"
B: "When's the last time you made your own?"

Of course, those arms look like they kneed different type of doughs all the time... If your baker doesn't have arms as Jamie does - don't trust them, the dough is barely kneaded.
Yeah, sorry mate, that thiccness ain't from exercise xD
Listen here, I have tone-less, flabby arms, and shitty weak wrists, and I make excellent sourdough with the help of my old mate Ken Wood. No shame in outsourcing muscle.
If it's a man... Women don't need arms that big to be a good baker. We just don't get muscle as easily as men.
The thing is, many people ignore that muscle gain occurs easier in the lower body for the average female bodied person, because that's how humans are designed. It's a balance.
Can we get more of this? Learning about frozen spinach was eye opening and stuff that can be cooked from frozen does help with my anxiety around cooking. Would love some more ideas! c:

The seriousness of Ben's face when saying "Danger Zone" is my new favourite.
Dow we will have a whole meme section on Danger alone
With fresh spinach I've also found that unless you use all of a packet at once (I dont know about other countries but round here it's generally only available in fairly large factory-packed baggies, like salad mix), you're unlikely to get to use the leftovers before it goes off. Spinach, especially if at all bruised, goes off quicker than a raw prawn on a windowsill.
