How to cook creamy peri MAFALDINE PASTA

  • Peri peri MAFALDINE CREAMY PASTA RECIPE
    Ingredients
    1 red onion
    1 white onion
    5 cloves garlic
    Tomato purée (1 tbsp)
    Parsley, mixed herbs, pepper 1 tsp
    Salt (to taste my peri seasoning had salt in it)
    Peri peri seasoning
    Peri peri sauce
    Pasta sauce
    Wild rocket (hand full)
    Mafaldine pasta (500g)
    Chicken breast (500g)
    Peas & sweetcorn (1 cup)
    1/2 tub of large light Philadelphia
    1/2 cup oil
    Method
    Marinate the chicken in peri sauce, peri seasoning and mixed herbs (leave for a hour)
    Slice the onions and crush the garlic
    Sauté the onions, add the marrinated chicken & garlic to the oil and fry for 10 mins.
    Boil the Mafaldine pasta until fully cooked through
    Add the peas and sweetcorn, add pasta sauce, tomato purée and all the dry spices
    Add the wild rocket and Philadelphia and cook for 10 more mins. Add the boiled pasta to the pasta sauce and simmer for 10 mins
    You can serve it like this if you want it saucy or make a delicious pasta bake if you love cheese
    If you would like to make pasta bake. Add the pasta to the oven dish . Sprinkle a generous amount of cheese and place in the air fryer oven for 10 mins on 200C
    (Or a normal preheated oven for 20 mins)
    Serve hot and enjoy
