    Usual Suspects Seasoning:
1tbs salt, 3/4 tbs pepper, 1/2 onion powder, 1 tbs garlic powder, 1/2 tbs Adobo and 1 tbs accent.
    Use liberally/ to taste
*For this cook, we used it in our shaker, ensuring an even coating of the seasoning. Keep in mind, not the entire "Usual Suspects" mix was used - the measurements listed above is what was put in the shaker.
    Pork Chops:
    Items needed:
    Griddle :P
    Oil (we used vegetable)
Pork Chops - cut of your choice (we had a 2 lb. pack from Sam's Club)
    Usual Suspects Seasoning
Probe thermometer (recommended to keep from overcooking).
Bring pork chops to room temperature, turn griddle to med/low (between 375-400 surface temp - this will vary which is fine, just keep an eye on your chops!). Place a 1-2tbs. of oil (your preference) on the griddle. Place pork chops on the oiled surface. We checked our chops every 2-3 minutes to ensure they weren't burning - total cook time 15-20 minutes (chops in the middle hotter area on griddle cooked faster). Cook until internal temp. is 145. Let stand for 5 minutes, serve and enjoy!
As always, we love hanging out, laughing, and enjoying life! Take a time out from life and laugh with us, because when you're with the WALTWINS, you're family!

One Forty Fiiiiive..... PERFECT Temp for sure. I've converted pork chop haters because they are dry by cooking them to 145 and they can't believe how juicy they are :) And man those pork chops are nice and thick! Great cook guys and of course I have to smash the like button ;) Thanks for sharing and "Griddle On"!

As a mom of two who has a husband who came home today from being out of town for work all week, you know I had to try to find the best method to cook thick center cut bone-in chops. I followed your video and did a few flips on the blackstone but due to their thickness I stuck them in the oven at 400 and covered them with foil to finish out the cook. OH. MY.GOODNESS did your video help! Thank you so much! If only I could send a picture of these monstrous beauties. And for the side, I chopped up all the veggies I had: green peppers, sweet potato, baby red potatoes, zucchini, onion, and a ton of fresh garlic. Used an AP seasoning and avocado oil on them and cooked on the blackstone…then to compliment, added a little of the “au jus” from the pork and a little Olive Garden Italian dressing for a vinegary bite. Soooooo delish!!!!!

Hey guys! Used your technique and seasoning like you did in this video, and it was great! Last pork chops I decided to cook were still frozen, so planned on defrosting in the refrigerator. I Thawed the surface just enough to be wet, and then dry brined them in the refrigerator. The next day they were dry and smooth but salted, so they wouldn't steam on the Blackstone. I mixed up some of your Usual Suspects minus the salt, since the meat was already salted from the brining. They were the best pork chops I've ever cooked. I tried the same technique on a New York Strip (simultaneously dry brining and thawing the frozen steak overnight on a rack in the refrigerator so it would be completely dry the next day). The moisture was pulled out of the meat then re-absorbed with salt into the meat, no visible salt remaining on the surface. The crust was fabulous (even a little crunchy), the meat was super moist and pink on the inside, good flavor throughout. I love my Joule sous vide immersion cooker and my pellet grill, and they have their place for certain meats, but these steaks and pork chops came out so good I don't think I can top them. Just want to thank you guys for the inspiration!

One of our favorite things to eat with almost anything is a vegetable medley. Sliced squash, zucchini, mushroom, and onion. with some asparagus thrown on there. we use butter and season seasoning(almost identical to yours except for adobe and accent which we will add to try) on there and put in a pan in the oven for about 30 to 45 minutes. I think we are going to try doing it on the blackstone and putting it under the dome and sitting for a while. This is also much better in the summer when you get these things fresh

Neighbors hate it when I cook so late because the middle of the night there is near silence so the echos of the grill is higher. One person actually got up last week and yelled at me.
