    ☕️ About this recipe:
    Full of bright colours, crunchy textures and contrasting flavours just like our Indonesian gado gado, it looks and tastes so good you forget you’re eating vegetables! Delish and healthy is our favourite combo.
    The nuoc mam cham dressing can be poured on or served separately when you eat it, making it perfect for a healthy work lunch. Store in a separate container and you’ll never have to worry about soggy salads again.
    🥒 Ingredients:
    500 g boneless chicken thighs / approx 2 thighs / 1.1 lb
    2 tbsp vegetable oil
    For the chicken marinade:
    1 shallot finely chopped
    3 cm lemongrass finely chopped
    3 garlic finely chopped
    ½ tsp ginger finely chopped
    1 tsp salt
    1 tsp sugar sub honey
    ½ tsp black pepper
    1 ½ tbsp fish sauce
    1 tbsp vegetable oil
    2 tbsp soy sauce
    For the vermicelli noodle salad bowls:
    150 g vermicelli noodles 5.29 oz
    1 carrot julienne sliced, sub carrot and daikon pickle
    ½ cucumber julienne sliced
    1 handful fresh mint leaves
    1 handful fresh cilantro / coriander
    2 tbsp chopped peanuts
    1 lime cut into wedges, optional
    For the dressing:
    ▢½ cup nuoc mam cham / Vietnamese dipping sauce

    0:05 Mix the marinade ingredients and add chicken pieces.
    0:40 After marinating, fry both sides until cooked through.

    I just watched several of your recipes and most of them are awesome for my overall preferences to Asian foods. I don't quite get why you do not have 100 times more subscribers yet. Maybe longer videos showing more detail on each step might help with UA-cam algorithm. I also like to hear the cook talk as it creates more of a bond with that channel that makes me want to watch more videos. Just some thoughts. Great video image quality by amazing chefs.

    Super Marinade!
    Used it tonight on a Spatchcocked (Butterflied) whole chook.
    Magic!
    What with Fish & Soy Sauce already there, I think I'd be ditching any further salt in future... 😉

      Oh great idea to use the whole chicken. You can definitely tone down the salt if you prefer, we find when paired with the sweeter / spicier nuoc mam it is balanced enough, but we do tend to like it on the saltier side. I blame Mum haha!
