I wouldn't recommend using a folding pocket knife because are not designed for stabbing directly at an object. Also, stabbing sideways isn't the same as pushing straight down with force. Even a K-bar or bayonet, which are made from hardened steel and are a straight, unhinged stabbing knife, would have problems stabbing sideways into a tire.

A slash is still dangerous but less so because the larger gap results in a lower air pressure passing through the gap.
