Light and Moist CHIFFON CHEESECAKE with Condensed Milk Buttercream

  • Have you heard of Chiffon Cheesecake? It's basically a light and delicate chiffon cake with condensed milk buttercream and grated cheese. It's a popular cake in the Philippines and if you're asking if there's cream cheese in this recipe, there's none. The cheesecake part came from the grated cheese being a part of the finished cake as filling and topping-
    RECIPE:
    ✅ CAKE BATTER
    5 large eggyolks, room temperature
    80 grams sugar
    60 grams/ml vegetable oil or canola oil
    70 grams/ml milk
    1 teaspoon vanilla extract
    130 grams sifted cake flour
    1 teaspoon baking powder
    ✅ MERINGUE
    5 large eggwhites, room temperature
    1/4 teaspoon cream of tartar or 1 teaspoon vinegar
    80 grams sugar
    ✅ BUTTERCREAM
    400 grams unsalted butter, room temperature
    1 ( 397 grams ) can condensed milk, chilled
    ✅ 300 grams grated cheese
    BAKING PAN USED: 9 X 3 inches round, ungreased
    BAKING TIME & TEMPERATURE:
    140'C for 35 minutes then increase to
    160'C for 10 minutes
    OVEN USED: Convection Oven, top and bottom heat
    ◾Always preheat your oven 20 minutes before baking
    ◾This is a popular cake in the Philippines and is so well loved because of the balance of sweet and salty flavor coming from the cake and cheese.
    ◾For the chiffon cake base, it's very important not to grease your baking pan so that the batter could rise and climb slowly on the sides during baking
    ◾Do not open the oven door while baking to prevent the decrease in the temperature causing the cake to collapse
    ◾Invert the cake immediately on a wire rack to prevent it from shrinking
    ◾You may also use this recipe for the buttercream if you are looking for a stable consistency
    ◾DIFFERENT OVENS VARY IN TEMPERATURE SO PLEASE ADJUST ACCORDINGLY
