ALMOND CROISSANT Cookies ( Fudgy, buttery & nutty cookies with creamy almond filling )
Creamy almond filling wrapped in fudgy & buttery cookie dough, much like a cookie version of a croissant - an intriguing concept but definitely worth giving a try, let's make it-
RECIPE: ( FILLING )
1 large egg
50 g ( 1/4 cup ) white granulated sugar
30 g ( 2 tablespoons ) melted unsalted butter
1/4 tsp almond extract
100 g ( 1 cup ) almond flour / powder
( COOKIE DOUGH )
1 large egg
70 g ( 1/3 cup ) white sugar
50 g ( 1/4 cup ) light brown sugar, packed
100 g ( 1/2 cup ) melted unsalted butter
1/4 tsp almond extract
1/4 tsp vanilla extract
220 g ( 1 1/2 cups ) all purpose flour
30 g ( 1/4 cup ) powdered sugar
1/4 tsp baking soda
1/4 tsp salt
Almond slices or flakes
Powdered sugar for dusting ( optional )
YIELD: 6 large cookies, approx. 115 g each
BAKING TIME: 20 - 22 minutes
BAKING TEMPERATURE: 175 ' C or 350 ' F
BAKING PAN USED: Cookie sheet pan lined with silicon mat or parchment paper
◾You may chill the cookie dough for 1 hour to lessen spreading during baking
◾Shelf life is 5 days in an airtight container at room temperature, 1 month if freezing
◾DIFFERENT OVENS VARY IN TEMPERATURE SO PLEASE ADJUST ACCORDINGLY

Hi! Thank you for your comment you're very nice 😀I haven't tried using the rice powder for this so i'm not sure if it would work; vinegar helped in making the cake tender with a moist and fluffy texture

You may leave them in the fridge for 1 week and 1 day if at room temp. You may place the properly sealed custaroons in a thermal cooler or container with ice packs before handing them to the courier; hope this helps

If you have to replace butter using oil then use avocado oil a better and a healthy option, canola, corn, vegetable etc are not good kinds of oil these are not healthy according yo experts, add glucose to make It Chewy and add cheese instead of powdered milk .
