Best Ever BRAZO de MERCEDES | Pillowy soft Meringue Roll with Lemon Custard Filling | Half-recipe

  • Make this easy & simple Brazo de Mercedes at home; if it's your first time to make it, try this half-recipe as a starter; here's what you'll need:
    RECIPE:
    ✅ CUSTARD FILLING
    5 large eggyolks
    150 grams/ml ( 1/2 can ) sweetened condensed milk
    Zest of 1 medium lemon
    1/2 teaspoon vanilla extract
    2 teaspoons cornstarch
    Pinch of salt or 1/8 teaspoon
    1 tablespoon unsalted butter
    ✅ MERINGUE
    5 large eggwhites
    1/4 teaspoon cream of tartar
    1 tablespoon cornstarch
    50 grams ( 1/4 cup ) sugar
    BAKING TEMPERATURE: 160'C or 320'F
    BAKING TIME: 20 minutes
    BAKING PAN USED: 9 x 2 inches square pan, greased and lined with parchment paper
    OVEN USED: Convection oven, top and bottom heat
    ◾Brazo de Mercedes is a classic Filipino dessert which literally means "Mercedes' Arm " or "Arm of Our Lady of Mercy"
    ◾It's a cake roll made of soft meringue with custard filling dusted with powdered sugar
    ◾Roll the meringue while still warm so it won't crack
    ◾The custard filling can have a variety of flavors like lemon & ube but you may definitely make it without the additional flavors
    ◾The purpose of the cornstarch in the custard is to act as a thickener; the cornstarch in the meringue prevents it from weeping or becoming too watery if placed in the fridge
    ◾You can make brazo cupcakes using the same recipe if making it into a roll is not for you
    ◾DIFFERENT OVENS VARY IN TEMPERATURE SO PLEASE ADJUST ACCORDINGLY
