Scrumptious BLUEBERRY WHITE CHOCOLATE CHEESECAKE ( No oven, no bake, no gelatin, no eggs! )

  • Summer season is underway so why not make this super easy cheesecake dessert with your favorite juicy berries readily available
    RECIPE:
    ✅CRUST
    160 grams ( 20 pcs ) graham crackers
    60 grams/ml melted butter
    ✅ BLUEBERRY SAUCE / COMPOTE
    300 grams ( 2 cups ) fresh or frozen blueberries
    50 grams ( 1/4 cup ) granulated sugar
    Juice of 1/2 lemon
    50 grams ( 1/4 cup ) water
    ✅ CHEESECAKE BATTER
    300 grams ( 2 cups ) white chocolate, cut into pieces
    400 grams/ml ( 1 3/4 cups ) heavy whipping cream
    400 grams ( 2 tubs ) cream cheese, room temperature
    50 grams ( 1/4 cup ) granulated sugar
    1 teaspoon vanilla extract
    ✅ 250 grams/ml ( 1 cup ) whipping cream for topping ( optional )
    BAKING PAN USED: 7 inches round springform pan lined with parchment paper ( you may also use 8 inches )
    ◾It's very important to use room temperature cream cheese for this recipe so the white chocolate will not seize or clump up when added
    ◾You may use frozen or canned blueberry sauce & other fruits of choice
    ◾I recommend using the best brand of white chocolate for desserts to achieve the smooth & silky texture of the cheesecake
