Aloo Palak/Potato and Spinach Curry| Vegetarian Recipe

- Aloo Palak curry is a delicious vegetarian curry with boiled potatoes in a green, smooth, creamy and spicy spinach gravy. Serve with your favorite breads/noodles/pasta/rice !!!

Ingredients for Aloo Palak Curry:
Spinach - Roughly chopped, 3 cups;
Potatoes - Boiled and cubed, 2 cups;
Onions - diced, 1 cup;
Garlic - chopped, 1 tbsp;
Ginger - chopped, ½ tbsp;
Green chillies - 3 or 4;
Curry leaves - 6-8 no.;
Coriander leaves/cilantro - ½ cup;
Spices - 1½ tsp cumin seeds, 5 cloves, ½ inch stick of cinnamon, 2 bay leaves, 1 tsp each of cumin powder, turmeric powder, coriander powder and garam masala powder, ½ tsp chilli powder;
Plain yogurt (or cream/cashew paste) - 2 tbsp;
Lemon juice - 1 tsp;
Dried fenugreek leaves/kasoori methi - 1tsp (optional);
Salt to taste;
Cooking oil - 3 to 4 tbsp. - Навчання та стиль

I must say this is a top class recipe for palak. Just tried it and one thing I had noticed is that I loved the taste of the whole thing before adding yogurt. After adding it the dish started to taste a lil like korma. I'd try it without it next time to enjoy the intricate flavors of the curry.

Thank you for this delicious meal!! would like to make more to give to friends am I able to freeze this and if yes for how long would it keep also if not freezing how long would keep in fridge? Namaste
The potatoes do not retain their consistency upon freezing, however you can freeze the spinach gravy for up to a month, and you can add freshly boiled potatoes to the gravy when you reheat.. the whole dish as such can be stored in the fridge for 2-3 days.. thank you

If you dont have curry leaves for the spinach can you just use curry powder?
Curry leaves and curry powder are not the same.. you may just skip the curry leaves

I'm unable to find fenugreek, is it ok to skip or do you need a substitute? Btw, I'm worried that you'll burn yourself with that pan, it has no handles.
+Elvis Galeano It is absolutely Ok to skip the dried fenugreek! Thanks for ur concern, but it's ok with me, I have been cooking for years and these are the kind of pans that we normally use in India :)

maybe because the spinach or the spices were not cooked well, or sometimes the batch of spinach itself can be bitter.. always try to use fresh and not so aged/baby spinach leaves
