Tanika’s Twice Cooked Truffle Oil Potato Stacks
Ingredients:
100g butter
3 tsp salt flakes
1/3 cup truffle oil
7 garlic cloves, minced
3 kgs potatoes, peeled
1L vegetable oil
Method:
1. Preheat the oven to 160 degrees celcius.
2. Line a 20 x 30 cm 2-inch-deep tray with baking paper.
3. Place a pan over medium heat and add the butter. Bring to a simmer, then add the minced garlic. Allow the butter to cook for a few minutes until deep golden brown. Set aside.
4. Use a mandolin to thinly slice the potatoes into 3mm thick slices.
5. Add the potato slices to a bowl, pour over the brown butter, truffle oil and salt, and mix through.
6. Add the potato slices into the lined tray and press to flatten.
7. Cover with baking paper, then foil, and place into the oven to bake for one hour.
8. Remove from the oven, allow to cool, then place into the freezer for four hours until solid.
9. Invert potato stack and slice into inch wide pieces.
10. Heat oil in a pot over medium-high heat and fry the potato slices, three at a time, until golden brown and crisp.
11. Place onto a paper towel to drain.
12. Serve immediately.

Leek Purée
Makes Purée for 4 Plates
Ingredients:
4 leeks, finely sliced - just the white part
3 cloves of garlic, minced
2 springs of thyme - stems removed
3 tbsp olive oil
50g butter
1/2 tsp salt
1/4 tsp cracked black pepper
1/2 cup double cream
Method:
1. Place a pan over medium heat and add the olive oil and leeks. Sauté for five minutes, stirring intermittently, until the leeks begin to soften.
2. Turn the stove down to low and add the minced garlic, thyme leaves and butter.
3. Allow to cook for another five minutes or until the leeks are soft and caramelised.
4. Remove pan from heat and allow the leek mixture to cool.
5. Once cool, add the leeks, salt, pepper and cream to a blender and process until smooth and creamy.
6. Use immediately or store in an airtight container in the fridge.

@@michimacho73 which is definitely how it should be! Honestly each chef turned up and made something and shouldn’t be ripped apart for that, helpful critiques are only gonna increase their skill rather than tear them down

Ryans Rosti was different to how I usually see them made. They usually squeeze out the water and only salt it afterwards and some even bake it after frying for extra crunch. I think I would have liked Tanikas most.
I’ve apparently been making Rosti’s for years without realizing it lol, I always just called it a hash brown. When I make them I typically add grated onion into the potato, which gives it a caramelized/crunchy burnt onion flavor. I’d highly recommend it if you like the flavor of burnt onion, which idk if that’s typical or not.
With latkes you put grated onion in typically

Ryan's dishes are always great but when I saw Tanika cook, I just knew. I knew she was going to win, superb. The simplicity of Ryan's dish is something to admire though

ooh two filipino's on the channel! and the Camote cue is my favorite snack growing up in the Philippines, it's quite easy to make tho. You can use the Camote in Pinakbet aswell! one of my favorite dishes

Potato and beetroot salad is a very common Central American dish. It’s one of the dishes my grandma taught me how to make when I was a little girl. So good!

I find it interesting because in the Dominican republic we have a variation of the beetroot salad, we call it "Ensalada Rusa", which translates to Russian Salad. It has diced potatoes, carrots, beetroot, onions, mayonnaise, salt, and pepper. Is a cold dish we eat on a daily basis but also during Christmas.

rösti is not a fancy name lol, if i'm correct hash brown is just the american name and most people in europe call it rösti
It’s similar but slightly different - hash browns are usually smaller individual ones & rösti is usually one large one like this. Rösti is Swiss although it’s eaten in a lot of Europe
I am with Will, Eggplant next! I love eggplant parmigiana so I would love to see what you all would do.
The first one I've had but with cut up boiled eggs in it as well, and no mint or walnuts or sour cream, just the mayo, salt and pepper. It is chef's kiss honestly

In Peru we Make something similar to the pink potato salad! We actually call it “ensalada rusa” that translates to “russian salad”lol we make it with potatoes, beetroot,mayo, carrots, peas and some people add corn. With a little bit of lime is really good!

My mother would grate potatoes, add salt, roasted cumin powder, roasted peanut powder with a bit of chilly powder. Then she would cook the roestis in ghee and serve it with green chutney. It was yumm. No egg. The peanut powder acted as the binding agent. Sometimes she added a little cornflour or rice flour.
Sweet potatoes and potatoes are distantly related root vegetables with different flavor profiles and textures.

the Rosti looked like he could have used to press the moisture out of the potato, but otherwise looked delicious. The Potato salad looked very creative.. I wish I didn't hate the flavor of beet root, but I'd still try it. The Candied Sweet potato.. def needed to be zhuzhed up, but a lot of potential. But that potato malfoy? Heaven. Australian Amy Adams wins!

fyi, caramelized sweet potato on skewwers (also banana) is a very popular streetfood snack here in the Philippines and it always comes with sesame seeds.

All four dishes look delightful!!!! I would not have thought about the combination with the beetroot potato salad working but it appears to be savory.. Generally, I am not fond of potatoes with sweetness but I would not mind broadening my horizons. I like the mint, beetroot and potatoes individually therefore why not try it out together.

Fun fact, in the Philippines nobody calls that "pink potato salad". By default, when someone says potato salad here, that pink salad is immediately what we think of. If it's not pink, that's when it's weird to us. The "normal" not-pink potato salad is whats considered fancy here.

Nah bruv, when we say potato salad, it is often the marble potatoes or the diced regular potatoes but no beetroot. Maybe in some other provinces, beetroot is more common in potato salad, but I have not seen pink potato salad getting served as the norm.
