I'm really trying to find the crispy Panzanella he did in the 30 minute meals series. Cannot remember if it was s1 or s2. Seems like it is nowhere to be found on youtube :-( If I cannot find it, I'm making the one from Food Wishes.
i just bought some chorizo from my local market but mine looks nothing like the chorizo jamie had around 0:16 his looks like a dark blood red while mine looks like a chile red o.0 and his looks a bit hard mine feels pretty soft like a normal raw sausage.... is there something wrong with the chorizo i buy?
ShutTheFuckUpDonkey ya i specifically asked for spanish chorizo o.0 but i went to grocery type of stores i'll try going to a legit butcher i suppose! one more thing, for that spanish chorizo jamie had was it already cooked? because it looked pretty hard and easy to cut if not ready to eat at that point, or should it be hard already when bought o.0 Thanks!
john king You need to buy cured chorizo sausage, I think (90% sure) that you are buying fresh chorizo sausage that needs to be cooked. In the video, jamie uses cured chorizo sausage (sausage that has been smoked/cooked and then has been refridgerated). I'm from Australia, so I don't know where in america you could find it... best to check the cured meats section where the salami is your best bet. Hope this helps
Im form Spain, And all I can tell you, is to recognize a good chorizo for the Smell and of course taste. typically, it has a strong pimenton (paprika) smell, a little bit garlicy. I use to prepare Macaronni with Chorizo, and what I use for it is one of the brand "la hoguera" spicy!

It's so stupid how Spanish people are all over this video saying "blah this is not authentic", while there's not a single word saying that this recipe is Spanish anywhere! I shouldn't cook authentic Italian if I use Italian sausage you brain-dead morons... I also realize that I'm muttering to myself here in this barren two year old land.

Its called Vinagre de Jerez, or sherry vinegar, there are a few places in canada. Just google search "Sherry Vinegar Toronto" you are bound to find some forum or website that knows who sells it.
A delicious dish! I served over toasted rustic bread like a bruschetta with some smothered pinto beans as well. I yielded a bit on the olive oil at the end and it still tasted great. Ran into one problem: my Spanish-style chorizo fried to a dried out, nearly rock hard texture. Any helps???
Chorizo is good...but I recommend that before you eat it and like it, do not read the label to see what goes into it! Heh, heh...I think haggis is like that, too.

Hello, oil is fat but on the positive side its considers one of the "healthy" fats. I think olive oil (extra virgin) is one of the good fats available to us.

Just made it. Keep the on medium/medium low because the garlic will burn and the vinegar will not stop the cooking on time. Really good though!
Instead of olive oil on the salad I used the olive oil that I was frying my sausage in. (After it became room temp).
