- Jamie has a super simple and healthy salmon recipe the perfect, tasty mid-week meal. Pan fried salmon with tender asparagus and courgette served on a bed of couscous mixed through with a sweet tomato salsa. Light, fresh and absolutely delicious.

I love how he keeps reminded us of health. Who cares? I would pick this over a burger anytime. Healthy food isn't bad tasting, it's just expensive.
Salmon filet: 1,75£;
; Asparagus bundle: 1,60£;
; Zucchini: 80p
; Couscous: 70p
; So 4,85£; for that meal. Lets say 5,85£; if you want to add some Greek yogurt. Asparagus, zucchini and couscous can be reused for other meals, we should even divide the price per number of meals you can cook with it to be fair.

Jamie, I absolutely love love love this recipe! It's healthy, it's quick and it's super delicious. Especially love this idea with the tomato salsa, just gives the couscous a really nice twist. It has become one of my favourite dishes to cook.
The salmon obviously looked amazing, but the couscous salad blew my mind. So simple, yet so perfectly balanced with the tomato. Eating it hot OR cold will be bloody fantastic, so I'm making this tomorrow. BAM! x
Made this today and came out delicious!! I love easy and quick recipes, only took me about 20 mins to cook everything ,will be making it again

The tomatoes look great and I cannot wait for the summer veggies from the garden like the zucchini and tomatoes. This dish looks wonderful! I made something very similar for my lunch 2 times this week! I just laughed watching this...too funny. I used Steelhead trout, pan fried, and tried to use mostly herbs and veggies from my spring garden which included sauteed asparagus, baby spinach, onion chives, italian parsley, watercress, garlic, and the carb was cannellinni beans (one time) and angel hair pasta (the other time), topped with parm cheese..

This is literally my favorite meal. I fell in love with couscous and fish after a perfect lunch a few years back at the Blue Salt Fish Grill in Redondo Beach, CA. I think you'd like that place, there spiced veg couscous is still the best I have ever had.
