Here's what we do with beets. Boil and peel them, or buy the ones that are already boiled and peeled :) Shred beets. Then: 1. Add crushed garlic, mayo and salt by taste. Mix. Or: 2. Add olive oil, crushed nuts, prunes... Or even raisins! Mix. We love these salads :) Have a good one! 🌈
Are there any recipes you recommend for people who don't like mushrooms or beets? I want to try them but they smell even earthier than mushrooms but look like the texture would be ok.

I don't think it's a failure, you have really whole grain dense bread that was cut think and a wet ingredient. if you want to keep the bread thick then dry the kimchi and melt it and the cheese a little bit before putting in the pan.

With my grilled cheese sandwich I don't oil the pan. The butter/mayo will be the oil, this is how you get the perfect toast and the bread will not get burned. I need to try this kimchi grilled cheese sandwich.
I've never tried kimchi. I'm not really a pickle lover, so I'm not sure how I would feel about it! On pots: I now have two sizes of cast iron pans and I use them over the non-stick pans I have now. Yes, I have to turn the burner on and off when I'm cooking something like pancakes in the larger one, but I far and away prefer their performance. My (adult) kids all know that when they do the dishes, those pans need to be dried on a burner for a couple of minutes so they don't rust. Easy peasy.
I would love to see a veggie miso udon soup. Veggies for stupid health reasons, miso for flavor, and udon for the soul. I don't know how to develop a recipe on my own, so I hope this inspires you to make it for me :p
I am obsessed with kimchi, I am totally jealous of that gallon! I live in a suburb outside of LA, so I'm stuck with what I can find locally. My favorite people to buy from are at my local farmer's market and that's cancelled until further notice. 😥

Do they offer anything to make sure the cardboard is sanitized? I've been afraid to get deliveries cause the virus can survive on cardboard for quite a while. Doctors / experts say to sanitize every item of grocery so we have been doing that, but you cant exactly disinfect paper and cardboard containers lol
