The cannoli shells are called "Kuzhalappam" in Malayalam, a vernacular language spoken in the southern state of Kerala in India. It is loosely translated as tube dish. Instead of whole purpose flour we use rice flour, eggs and a dash of kumin powder, when fried in coconut oil, it makes a crispy snack often relished during holidays especially during Christmas. It is interesting to know that similar delicacies are enjoyed in other countries and cultures.

Instead of marsala, u can use white wine with a teaspoon of vinegear.
If u pass to a sieve the ricotta cheese, u can have a better consistency!
