It could be because of several factors. 1. The yeast may not have been active. 2. Make sure you are using a weighing scale to measure ingredients (not cups and spoons) for greater accuracy, at least until you develop a feel for how the dough should be. 2. You may not have proofed the dough enough after shaping. Proofing time varies widely based on ambient temperature. You need to wait until the dough just barely springs back when poked. If it springs back quickly, it is underproofed. If it does not spring back it is overproofed.
@@BongEats I don't know.. Because a few days back I made the tigmo turned out to spongy but did not fluf up so much... And I used the same yeast. ... And I did weigh the ingredients in a weighing scale too....

Poke the dough, if it springs back quickly it needs to proof more. If it does not spring back at all, then it is over proofed. If it springs back slowly but not completely then it is perfect and should be steamed immediately.

One thing- Should the dough be soft or hard like luchi? I tried it exaclty with the same proportion. Dough was not soft like the one used to make rutis... Yet to try the end result though:) BTW, I am going to have it with ema dashi. I made the latter one today and it is so yummy. This is the first time i made something which was so different and yet simple to make. Since I was checking the seasoning,( khawar aage, ek baati sesh kore diyechi. Thanks for sharing the wonderful recipes. I have used your channel previously for other bong recipes. Eka thaki. Tai sob i nijei korte hoy but I love cooking. I will contunue to do the same. manjitrupbikram yes u can use atta but I think it won’t be as soft as maida. Or may be u can try refine atta instead . No harm in trying :) and yes as u say it’s more healthy for sure

While I was in Sikkim, I tasted "tingmo with aloo dum and radish salad" which seems to be a famous combo there. And since then I'm a fan, I did tried making it but my tingmo seems to be halfcooked inside everytime.
I'm afraid there are no alternatives to yeast in bread making. The yeast consumes the sugar in the starch and creates ethanol and carbon dioxide. The carbon dioxide creates holes in the dough, which expands in the size when we heat it during baking. The yeast dies due to the heat and you are left with spongy bread.

You will need something with gluten for this recipe to work. Can't think of a substitute. Tapioca flour would work too I guess, but you will need to experiment.

You can eat it with any spicy stir-fry, or gravy, or even a thick soup. Tastes really good with pork shapta.
