Blue cheese is one of my favorites, especially Stilton and Gorgonzola. I will make this dressing as a dip over Christmas and any time as it is a winner.
Kevin, I learned cooking back in the late 60's. I am 75 now myself but remember back when you made a lot of things that now are purchased through a supplier. Your recipe is exactly how I was shown when I was starting out. I love blue cheese (actually I like gorgonzola best) and your's is it. Thank you.
Kevin when I was in high school I had an after-school job in a well-known steakhouse restaurant in my city (Portland, OR). They made their own in-house blue cheese salad dressing, but at that time in my life I absolutely hated it! As a busboy I had to take the salad dressing tubs and pumps back to the dishwashing area when they were empty, and I remember holding my breath because I couldn't stand the aroma of that blue cheese - yuck. Strangely, a few years later while I was in college my tastes changed and I suddenly loved blue cheese dressing. Now it is one of most preferred salad dressings when I'm eating out. I have no explanation for this about-face. But I'm glad this happened. I frequently buy small blocks of blue cheese and make my own in my food processor. I'll give this recipe a try! I also like the suggestion to try it on baked potatoes.
Dear Kevin, last night, a cold November night, I made your magnificent Irish beef stew, fabulous beer bread and I served it with Calcannon.The bread has an amazing flavor and wonderful crust.I did add rutabaga to the stew.I entertained my brother and his wife wife. We sat informally by the fire sipping Brandy Alexanders and eating my assortment of Christmas cookies that I have made to date,doubtless I will need to replenish my stock.They know where I keep them,the freezer.
I have recently acquired a taste (addiction rather) to Blue Cheese, this video is not only tame my addiction, but also save me keep me in the kitchen longer.... thanks for showing us this amazingly easy recipe!!!!

It is always added to the salad of my favorite dinner of marinated-aged steak, loaded baked potato and over the top salad with blue cheese dressing; and French onion soup. Of course, I could never eat all of everything, so I started with salad and soup, then worked my way through the steak and baked potato, always taking forever to eat. Thank you so much! Hi Kevin. I just added blue cheese to the grocery list. I love it but don't have it around all the time. I remember big, sometimes huge, wedges of Iceberg lettuce, topped with lots of blue cheese dressing and sprinkled with bacon. After all, the lettuce wedge had no calories or fat so the dressing and bacon were needed for balance! (Seemed irrelevant that it was usually served with a sirloin and loaded baked potato!) Thank you for reminding me how good it can be. Yes, I'll be making this soon and serving it with a crudité plate, as you did. Looks delicious!

Just a suggestion, put your broccoli in a wire strainer and dunk in boiling water for just 15 secs or so and it will be bright green and more appealing.

To, KLJ & viewers: Before my ever having had stumbled upon Stilton, my favorite penicillin had been blue cheese. Here, for a dressing the comparatively milder blue probably is more suitable. I doubt if you care but "KIELECKI MAYONNAISE " is example of a good quality mayonnaise . You can purchase it in any Polish foods outlets throughout major cities in the USA.

I, too, remember the famous Iceberg Wedge topped with crisp, crumbled bacon and blue cheese dressing. A true relic that is worth revisiting!
My favorite is blue cheese dressing on a baked potato in place of sour cream.

There's nothing like homemade blue cheese....gonna try. Don't have food processor yet tho...hmmm?
You can make this dressing with just a bowl and a stout spoon. Crumble the blue cheese by hand. Enjoy!
