Korean bakers,bakeries are the cleanest I've ever seen,their stuff is amazing....everything I've seen up til now on this channel is truly mouth watering and a joy to watch.videos are beautifully made,thumbs up to you camera guy,hope you getting to eat some of those beauties!!
Part of the basic principles of pastry making is a concept called mise en place. A clean working environment is important for mise en place so you can move quickly in your workspace. You should visit more patisseries.
This channel is great when it showcases Korean food, varieties of foreign food and some food trends in S. Korea but when it comes to patisseries and breadmaking, it showcases that a lot of shops in Seoul is a bit behind in the latest breadmaking know-hows to make absolutely beautiful bread that brings out natural flavours. This is not necessarily the shops' fault, it could be due to their target customer and the price they're willing to pay.

Chef here! Let me explain:
Trash Ice is another expression for Ice Bath. Basically you'd use ice water to quickly cool down food such as hot soups or keep things cool as you mix them. Then you would toss the ice.
"Fermented Species" is basically Sourdough Starter which is Yeast and Flour and Water (sometimes sugar) mixed together and allowed to sit overnight to ferment. "Feed" the Starter daily with more Flour/Yeat/Water mixture and set it over night again. You basically keep doing this until you reach the desired sourness flavor for the bread you're making.

That's an interesting method to make croissants. It's very different from how I learned in school and at french bakeries where I worked at. I've never used cold water either. I've tried croissants in S. Korea at Paris baguette. This bakery would definitely be interesting to visit.

Love how it’s still practically handmade and not through a food processing machine.
I used to work at a large automated bread factory. I was the poison guy. Everything that came down the conveyor I slung a handful of poison at it. Nobody knows why, it's just that anything made in a big factory has to be poisoned somehow. The poison is expensive and it lowers the profits, but it's worth it.

I dont know if anyone is going to see this but while they are laminating the dough (making the layers by folding the dough sheet) instead of folding the seems to align, they leave a margin for the dough to curl over to close the loop. The end is tucked in and the absence of open sides allows for the butter to stay inside the dough :) this is how you make great croissants.
Is nobody going to point out the fact that they called the ice "trash ice" at 2:27? 🤣🤣🤣
It's ice that's broken or chipped and partly melted. It's used for utilitarian purposes. That stuck out to me also and I obviously googled.

Oh, they use Elle and Vire professional butter 🧈! I've seen the retail sizes in my local supermarket. Expensive butter indeed! These baked goods 🥐🍞 must taste awesome! 😋
Elle & Vire is actually not an high-end brand, it's industrial generic butter. If you want some good stuff look for butter with an AOP/AOC.

And it's indeed expensive here in Singapore as with all the French and European butters, compared to butters from other regions. The more affordable butters avail here are from Australia, New Zealand and India.

I ate this kind of bread in South Korea, and it's really good... they have a lot of good and strange meals, salt snacks with chocolate for instance... but very very good. Amazing experience!

It's made the same way as all the other croissants it just has slightly different ingredients to make it a chocolate croissant. The process however is exactly the same...
