    Add a little baking soda to the flour mixture as well, it'll gelp withvthe crispy texture. Adding baking soda makes incredibly crispy chicken if you use buttermilk or an acid in marinating your chicken.

      The flour absorbs it and swells creating all the little chunks. Then the chicken gets chunks of flour stuck to it rather than just tiny granules.

      Yup, that’s why when you’re breading chicken the last few pieces always look better than the first few because of the extra clumping.
      Adding a teaspoon or so of baking powder is another thing that really adds another dimension to the crispness. The batter will expand slightly as it hits the fry initially and creates even more surface area.

      You literally put it in your fridge and go about your day, its not hard. Even if yourr workong you just throw it in there and come back to kick it in less than 20 minutes, that imaginary 5 hour cook time you people complain about doesnt exist, its not a slow cook you have to watch

    Allowing it to sit in the flour for that long actually allows gluten to form which makes for a more chewy and less glass like crust. Do the experiment yourself and see the difference.

    I like using whole eggs for chicken frying, but when I fry fish I beat the egg whites just before soft peaks so that it’s runny but foamy. It makes the best crispy fish!

      It's too high of a salt-to-spices ratio, for me. I used to love Messina's, but they're out of business.

    Omfg i followed the steps minus adding additional seasoning to everything and IT WAS THE CRISPIEST CHICKEN I'VE EVER MADE! It was crybchy even the next day (more like 8 hrs later) and it was a hit for my partber who says i can't even boil water 🤣💀 its a nust try!

    Yes! Please use more creole seasoning! Hate when I see a cooking video and it's only salt and pepper. Creole, garlic, onion is all you need

    Sticking to sea salt for the dry brine works just as well as, if not better. It's been my experience that keeping it simple is the most effective way. Plus, then the spice won't drown out the flavor of the chicken

    Pro tip:Use a wet brine in buttermilk, pickle juice, and seasoning for 3 hrs. Then when you pick up your chicken let it drip into the flour for that crust instead of using water
