Sam, I work in kitchens for a while and the first thing I was told is that when I put my knife down, the blade faces away from me, always. It really makes sense and its an important habit. Having the blade facing you can be very dangerous. You must also place the knife at the top of your work areas, not on the sides. Stay safe, you are a great cook regardless.

I bought seedless lemons recently. They cost $7 for 2 pounds but they really were seedless. I got a considerably larger amount of juice from each one which was great.

I learned somewhere to use mayo instead of butter for grilled sandwiches. It really makes the bread toast up well without getting soggy. Definitely worth trying.
onion gravy dip idea was incredible. Before I smoke a brisket I remove a few inches of the flat because it is thin and usually the driest part. I turn that into pastrami. .

We make these at work! Delish! Pro tip. Dump the coleslaw. Heat the pastrami in the beef broth. Prep it just like a grilled ham and cheese.
