I had one, his name was "Semedley".

Hi, Emmy! I was born and raised in New Orleans, so I loooove seeing you do this. Chef Paul's recipes are OUTSTANDING. The only recommendation that I have for the crawfish boil is instead of using a bunch of Cajun seasoning, use some Zatarains crawfish boil. It's a red liquid similar to red chili oil. It takes the flavor of the crawfish to another level. Life changing, girl. Try it!

I am actually a vegetarian. I personally think that anyone who eats animals needs to understand how an animal dies when it is killed for food. Reading about it is not enough. Meat-eaters really need to see for themselves what the animal goes through when it is killed. Animals do have feelings and they do react to pain. If the manner of death of an animal bothers a person, then perhaps the person should become a vegetarian.

I’m Swedish and we have this tradition of having crawfish every year in about mid August. We just gather family and friends and have crawfish, garlic bread and maybe some special cheese quiche, and some may have far too much alcohol but that’s each to their own (I don’t drink alcohol at all myself) our crawfish are generally just cooked in slightly salted water with dill flowers in it, so the crawfish have dill flavor along with the saltiness. It’s really good

And down the road from me is a very popular seafood restaurant that is known for its crawfish. Im not sure how well known crawfish boils are in northern states, but if you live in Mississippi, Louisiana, Alabama and a few other states then you 100% have at least witnessed a crawfish boil. My friends mom in British and even she hosts crawfish boils.

Cajuns often add celery to the seasoned water with the onion, whole pods of garlic, smoked sausage and even extra items at the end of cooking like whole cabbage, large mushrooms and even artichokes. A product called Crab boil or seafood boil which comes in dry or liquid form is usually added.

You also rarely suck the end of the upper body the way you did, we usually suck the juices out from the stomach and then open up the body and eat the ’butter’ in the head. You also usually eat the meat in the claws. Some people use special knives to pry them open, but I usually just bite them until they break. You take away the tail last.

Hi Emmy! NOLA gal here. I'm so happy you finally got to taste crawfish. They are one-of-a-kind and truly delightful -- just like EMMY! :D I have been here many generations never heard of the catsup/mayo combo for dip. I'm a city girl so maybe that's the difference? When we boil we tend to let the crawfish soak much longer than 5 minutes. Get lots of spice up in the food. Whole mushrooms are incredible in a boil because they soak up sooooo much flavor like a little sponge. It is also quite traditional to put whole heads of garlic into the boil. People eat the garlic cloves, or they smoosh it on New Orleans French bread. If you ever do crawfish again for your channel you might want to look into how people steam the crawfish right inside a cooler. It's fascinating, no propane rig needed for a boil. Having a rig and huge pot is one of the issues with boiling for large groups. The cooler method makes it more accessible to cook outdoors. Thanks for sharing. It's always a pleasure to watch your videos.

I live waaay down at the bottom of the ‘boot’ in Houma, and I must say I’m impressed Emmy! That boil looks pretty tasty!
For the boils we do here, we load the pot with a TON of halved onions, garlic, halved lemons, sausage, mushrooms, celery, carrots, corn and red potatoes, seasoned with some Zatarain’s Seafood boil powder (less salt but more flavor than seasoning powders like you used) salt, and some stick butter. This mixture is what we cajuns call the “soup.” We cook all that down beforehand to give the water all that extra flavor, take all the veggies out so they dont overcook, then we drop the crawfish in! And we throw in some ice and soak em for a good 10-20 minutes after cooking to make sure they’re seasoned well. We pull one out for a taste test every 5 mins until we like em. Also we never “dust” them with seasoning like you did because all the flavor should be on the inside sha!! Some northern cajuns do it that way, but us southern folk frown upon it 😂

My boyfriend went to college in New Orleans and came back with a love of the food there. We make crawfish ettouffee (and king cake) every year to celebrate Mardi Gras. We make our own seasoning blend without salt so that we can add lots of cajun spice. It has become my go to spice blend when cooking, and I love that I can use it generously without having to worry about over salting. We also keep a canister of store bought cajun seasoning on hand though because it's great sprinkled on lots of things too.

I’m a New Orleans native born and raised. I must say your Étouffée was on point. And you did very well within your boiled crawfish. But next time you boil crawfish look for Zatarains crawfish, shrimp, and crab boil. It comes in a liquid or powder form. You may find it at a grocery store on your international isle of you can Order offline. I personally prefer the liquid as it tend to be spicer and the powder can tend to gunk up in the pot. So you get your water add you crawfish boil and salt into the pot get it boiling and you would add your corn, and lemons and onions first as you did. Some people put cauliflower and celery in also. Once that gets a good rolling boil you add your crawfish. Boil them for a bout 5-7 minutes. Over boiling makes them harder to peel. And when you put in your crawfish you add your potatoes, smoke sausage, hot dogs . After boiling for about 5-7 min. You cut off your fire and let everything soak about 12-20 min. The longer they soak the more spice is absorbed in the food. So you can control spiciness that way. Then after soaking you would stain all the liquid off and eat up. The Mayo and ketchup is very popular down here as a dip I’ve also seen some people add horseradish to the Mayo and ketchup mixture. Melted butter is popular. And just plain vinegar also.

In Sweden we are totally obsessed with crayfish around August. That's when the crayfish season starts in Sweden.
I grew up close to a lake where we had a version of crayfish called "Swedish river crayfish". They were awsome and reproduced like crazy, so our little lake was full of them every year. Plenty for everyone.
It was my favourite time of the year, with dark but warm nights with plenty of moonlight and usually clear weather so you could see the stars. That was magic!
I picked the crayfish by hand with a little flashlight to temporarily blind them so they would freeze, but you could use a crayfish cage if you were lazy. 😆
Sadly the crayfish in our lake has died out from a disease brought to Sweden from live American crayfish (a variety we call "signal crayfish", that has a white dot on the claws, so they look like they are signalling to each other when they move their claws). That disease is slowly making the Swedish river crayfish extinct. I really miss that fishing season. 😢
It is such a problem there is a suggestion about making it illegal to sell and transport live American crayfish. It is already illegal to release them into swedish waters.
The american crayfish is slowly taking over, and they are (I would say) equally delicious, but they don't reproduce fast enough. They are seriously slow!
The interesting part is, the crayfish that you have there is not the species I am talking about, so you seem to have several different species over there.
We cook our crayfish with plenty of dill (another thing we Swedes are obsessed with 😆), salt and sugar. Some also add beer to the broth. Absolutely delicious! 👍 You should try that version too.
I still stuff my face full of them around August, only nowadays it has to be store bought. Not as good as the fresh home cooked ones, but still delicious! And we now have cooked crayfish from all over the world. You can buy Turkish, Chinese, American or Spanish crayfish. All slightly different.
And I would definitely agree with you. They ar way better than lobsters!

Omg gumbo is the be frickin best on a cold winter day. Spicy, savory, and delicious. Although I use amberjack, shrimp, sausage, chicken, and a few chicken breasts.

I had Etouffee in New Orleans. I love it!!! 😊 my brother Jon and his wife made Crawfish Broil for dad, me and my elder brother Justin. They invited us to come over to have some, it was good. 😁
