Made this for lunches this week and really enjoyed it! My grocery store didn't have radicchio so I subbed a small bag of shredded green and red cabbage to get at least some of that great purple color contrast. I wanted a little more sweetness so added some craisins, and then topped with broiled salmon. Would make again!
I have made something similar to this often , but your recipe plus the pomegranate dressing just took this up many notches! So healthy and very delicious..😊
This is not unlike the "Power Veggie" bowl at Urbane Cafe here in southern California, except that they add some more ingredients and use a regular balsamic dressing instead of pomegranate. I am going to start making my own version at home, but I am planning on adding candied pecans to the mix. If I go with the dressing from this video, I will probably cut the honey slightly to compensate for the sweetness in the candied pecans.
That there is black kale, we used to grow it to feed sheep, I suggest we keep it for that ! I don't know if sheep will eat sweet potatoes but something ought to. The smell coming out of that bowl is nascent compost.

Maybe because she was originally saying "Today I'm making a simple supper of roast chicken and salad followed by rice pudding." Not sure where that particular "salad" came from, but when they pare the full episode videos down to feature just one of the recipes, some of the editing gets awkward. 🤷♂
Try cutting the ribs out and smashing up the kale in your fists. Then add craisins, wasabi peas, Thai peanut sauce, and chopped nuts. It's freaking awesome.

Skip kale, use spinach. Nutritionally speaking, spinach and kale are almost the same. But spinach is much more versatile and easier to prepare than kale. Kale only makes sense if you run a restaurant that serves soup that stays heated all day, since kale won't wilt like spinach does under those specific conditions. Kale is kind of a fad food.

Also, if you don't want to wet kale, which can be annoying, 'massaging' the leaves works great too!
You could also use a salad spinner after the kale is soaked and to help it dry completely.

Pomegranate molasses is a very underrated ingredient, I use it as the 'vinegar' in all sorts of dishes, both sweet and savory.
