Instant Pot BBQ Ribs

  • July 4th, Independence Day in the U.S.A., the declaration of independence by the Continental Congress. What does that mean in the U.S., it’s that time of the summer when we are lighting off fireworks and BBQing anything we can. If you have a gas or charcoal BBQ, or better yet, a smoker, well then life is easy. If you don’t, your stuck with pan fried burgers and hot dogs. Fear not my friends we have options! Take a gander at this recipe, BBQ Ribs in a pressure cooker! It’s so easy, no need for the other devices, just you, some liquid, and a pressure cooker. Now you have some damn fine BBQ ribs to enjoy on the 4th of July !!
    Tweaked a bit from a Jeffery Eisner recipe, if you don’t know who he is, look him up on UA-cam, he has some great recipes.

    Ingredients
    +++++++++
    1-2 Racks of pork ribs (I used St. Louis style)
    32-64oz Apple Juice (to the MAX line on your inner liner of your pressure cooker)
    *Don’t worry if the ribs are not completely submerged, it won’t make a difference
    1c Apple Cider Vinegar
    1/4c Liquid Smoke
    Any style of BBQ sauce you like

    Directions

    1. Prep your ribs by removing the membrane on the back side of the ribs, this is not mandatory, its your preference. You can see in the video the difference between leaving it on and taking it off.
    2. Add the ribs to the inner liner of your pressure cooker in a circular direction.
    3. Add the liquids, remember not to submerge the ribs completely, follow the maximum fill line of your pressure cooker. It is usually stamped on the liner itself.
    4. Place the lid and lock it down, set the vent to sealing (follow directions of your cooker)
    5. Set the pressure cooker to:
    - High Pressure
    - 18-20 minutes for very tender, fall off the bone
    6. Then press Start
    7. Wait for 12-15 minutes of Natural Release (don’t open vent)
    8. When timer hits 000 start preheat oven broiler
    9. After the NR time, place a towel over the vent and release the pressure.
    a. Wait until its completely done releasing pressure before removing the lid
    10. Remove ribs and place on an oven safe baking pan
    (Baking plate for those that know 😉)
    11. Baste both sides with desired BBQ sauce
    12. Place under broiler for 3-6 minutes for the sauce to caramelize.
    13. Carefully remove from the broiler, let cool, and devour 😉
    You can pair this with some great beer (like Guinness, my favorite), some coleslaw, I have a video for that too, maybe some potato salad, yep, video there too, or just good friends.

    You only need about 1 cup of liquid for the IP to come to pressure. Looks like you used 6+ cups! May have been a bit excessive. Final result looked really good though!

      You are correct, but I’ve done it both ways and the increased liquid seemed to infuse more of the flavor from the liquid, in this case, apple. But you are right, 1c would/could work also. End result was great. Thanks for the comment !

    I doubled a Baked Bean recipe and didn't pay attention to the liquid. Didn't put a thing over the top and created a fountain of bean juice on our kitchen counter.
    Really love the instant pot, have quite a few regularly used recipes. Shredded chicken tacos, pot roast with red wine, the favorite was chicken shawarma.

    Last time in the slow cooker you made a dry rub and used it but you didn’t show it this time, did you use the rub or no out of curiosity?

    I just made the crockpot ribs with Coca-Cola in the slow cooker, it’s always my favorite thank you for that recipe. But what would it taste like if I replace the Coca-Cola with apple juice concentrate? Do you think it would make much of a difference? And do you think it would taste better or worse? Thanks.

      Apple juice is a great additive, I use apple juice when I make ribs on my smoker. But... the main reason for the soda isn't for flavoring. There is an acid (phosphoric acid) in the soda that tenderizes the meat. Do I think it will be better, that's a matter of individual taste. I do love apple as an additive to my other ribs. If its the sugar content you are concerned about, you can get the same results with a "zero" added sugar soda also, again, its just the acid we are looking for. Let me know what route you go and let me know how you like it.

      Yeah, I have soaked the counter many times, more liquid mean more mess. Always have a towel handy.

    Too much liquid caused it to syphon and disintegration of the meat.

      Well... that's a matter of opinion, the liquid actually had 1 job and it did it quite well. It was there to tenderize the meat. That's all.
