Simple Roast Beef with Babish

- An eye-round roast is one of the least expensive but also least fatty and flavorful cuts that comes to mind. But by dry brining and using sous vide express in the Anova Precision Oven, it can be turned into an affordable and delicious holiday roast.
This process turns a cheap cut of meat into one that’s tender and ready for holiday entertaining in less time than a traditional sous vide method. The food probe ensures a perfectly rosy doneness from edge to edge and a quick second stage in air fry mode browns the exterior without overcooking the center. You can serve this roast in thick slices straight from the oven, or chill it overnight and thinly slice for sandwiches the next day.

I didn’t expect this to be as good as it was. Really impressive. I salted it a couple says in advance, cooked it to 120ºF, then did the high heat sear, brushed with melted beef tallow. The results were extraordinarily tasty. Sliced thinly, it had a terrific roast beef flavor. Excellent result.
It's amazing the results you can get with this oven when you know what you're doing. Too many bad reviews that are clearly from people still trying to get to grips with it and keen to blame the tool not themselves.
i have one of these and it's amazing. i have put similar commercial ovens in kitchen for $66,000 for a double stack full size ovens. another $20,000 for installation (core drilling for in and out water). this is 99.9% as good for a miniscule fraction of the cost. and every recipe i've tried from the app is excellent.

Made this twice already. First time having a fresh roast beef and it was fantastic!! I made some garlic confit for mashed potatoes and used that oil for browning it. Not sure if it added much, but damn was it good with my potatoes, green beans, and spicy honey carrots!
Was it very tender? Or mostly chewy? Seems like such a short roast time

Is it possible to do a similar recipe using a standard Anova sous vide bath? Perhaps with similar temperatures, but longer time?
Why did you cut off some of the meat at the beginning?
It's nice, but the door stopped working (completely) shortly after 2 and a half years... and after using it about twice a month... only!
Even amateur equipment has to last much longer!
ANOVA does not provide a pan which is deep enough catching all drippings and shallow enough to clear rear element. Took me three try’s on AMAZON: USA Certification Thick rectangular Baking Sheet with Rack Set, Stainless Steel Cookie Sheet Baking Pans with Cooling Rack,Ovens&Dishwasher Safe (XL).

i have not received the items on order number SGS15533. i chose FEDEX as the shipping method but you sent it with hongkong post. HONGKONG POST IS OFTEN PROBLEMATIC. PLEASE HELP TO CHECK BECAUSE ITS BEEN MORE THAN 2 WEEKS. Tracking is not progressing since 24th of October!!!!
