    Nutmeg Notebook Creamy Balsamic Dressing
    1 box or can of cannellini beans no salt added, rinsed and drained
    1/2 cup balsamic vinegar *
    3 to 4 Medjool dates - pitted (depends on how sweet you like it - you could use less or more)
    4 teaspoons Dijon Mustard or no salt added mustard
    1 cup unsweetened plant milk ( I use almond milk, use soy milk or oat milk for a completely nut free recipe)
    2-3 teaspoons Garlic & Herb no salt seasoning or you could use 2 fresh garlic cloves
    Mix all the ingredients together in a high power blender like a Blendtec or Vitamix until smooth and creamy. It thickens after chilling in the fridge.
    If you have a regular blender you might try soaking the dates in warm water to soften them so they will blend better.
    *For a slaw salad I suggest you use the white balsamic vinegar - Trader Joe’s has a good one and other stores also sell white balsamic vinegar. The lighter color looks better on a slaw. The white balsamic is a lighter flavor but it still makes a yummy dressing.

      I am really excited to try this after reading so many great reviews. I am the type of person who loved the dressing the most in a salad, ha ha... so to finally let go of oil will make it so much healthier and lower in calories.

    Wow! I was so surprised how delicious this dressing is! I make my own beans so I used regular northern white beans because I could not find Cannellini beans. This is a keeper! Thanks!!!

    Good tip on counting the dates and pits. It will save you from grinding the pit. I have done that one. LOL Looking forward to making this dressing.

    Thank you!!! Balsamic vinaigrette has always been my go-to before recently switching to a wfpb diet. This is a keeper and will be my go-to dressing recipe! (I added some water to thin the consistency a little (personal pref), but I absolutely loved the flavor! I've been enjoying all of your recipes I've tried and have a queue of those I can't wait to try!

    Thanks for sharing your recipe! I'll try it. At the moment I love a dressing made with 2 TBSP of sunflower seeds (freshly ground), the juice of half a lemon, 2 TBSP of water and 1 TBSP apple cider vinegar. Sunflower seeds contain vitamin E and are great if your eyes are tired (from working at your computer for example).

      About 4-5 days. Some people keep it longer and some freeze it. You can always make half the recipe too.

    I followed you along as you made this. I used a can of channeling beans drained as didn’t have box. Also used Dijon. My dressing looks very dark compared to yours. Why do you think that? Yours looked creamier too.

      I am glad you tried the recipe. I don't know why yours looks darker than mine - coudl be the lighting on our video and photos. Could be difference in Balsamic vinegars.     Excited to try this..love your videos.. btw, this can't be called nut free with the use of almond milk. Do you find the almond ok in milk form even though you don't consume nuts any other way? I may make some hemp milk instead..

      Changed the title to avoid confusion, I have modified the title of this video as you are correct in your comment. The major advantage of this recipe is that it does not use a quantity of high fat nuts to achieve the desired texture (hence the original no nuts statement) that many plant based dressing do. Therefore it is wieght loss frendly. If you have a nut alergy you can use soy or some other plant milk to be completely nut free. Thank you for watching!

      It's good for several days. You can freeze it too. Or of course you can cut the recipe in half. Enjoy!

    Hi Tami, if you were going to omit the dates but use the Napa Valley Grand Reserve balsamic vinegar, how much vinegar would you use in place of the dates? or it that the vinegar you already used in the recipe and you don't use anything extra to replace the dates? I am probably over-complicating this. lol Aso, could we use water instead of almond milk?

      I wouldn't change the quantity of Balsamic I would just delete the dates. You could try water in place of plant milk - I haven't made it that way and it might not be as creamy and thick but try it. If it's too think you could always add some chia seeds to thicken it.       The box including the liquid is 13.4 ounces by weight before it is rinsed and drained. Best guess, deduct a couple ounces for liquid, so try 11 oz or so, then adjust if it seems to thin or too thick

    Can I use a white wine vinegar if I can't find the white balsamic, and if so, would the amount be the same?

      I have never tried white wine vinegar in this recipe so I don't know what the taste will be like. I would make half a batch and see how you like it!

      Hello Lisa. My statement could have been more specific. it is in reference to the cannellini beans that are used to replace cashew or other nuts commonly used in non dairy dressings to give the dressing body and flavor. Using the beans keeps the calorie density down. Using soy milk would be completely nut free if that was needed and not cause any issue with the outcome. Thank You for bringing this to my attention.

    Can garbanzo beans be used instead?

      I have never tried that, Garbanzo beans have a distinctive flavor and will not be as creamy, You might try making a 1/2 batch to check out how it comes out.

      We have kept it in the fridge for up to 10 days with no problem using fresh ingredients. I think the vinegar and the mustard help extend refergerated shelf life.

    No need to use the more expensive Majhoul dates. The Noor dates are fine, you don't have to pit them, and in a recipe like this you won't know the difference. In fact, I defy anyone to tell any taste difference in a recipe like this made with medjoul dates vs. noor dates.
