Considering the missile can pull something like 20Gs in a terminal intercept, there's actually not much angular deviation to hit that huge ass plane swirling like a falling leaf. The guidance would probably predict the maneuver and course correct to detonate ahead of and destroy the plane.

There was a similar maneuver done by the P 51. Full elevator, full bottom rudder. The propeller torque would roll the plane. Then neutralize the rudder full forward stick and recover. The P 51 would virtually disappear from a pursuing opponent. The P 51 would be 2000 feet below and behind. There is at least one case of a P 51 scoring a victory because the pilot was able to take a shot as the enemy passed.

The general rule with most aerobatic maneuvers is that they do them relatively slowly becasue the jets are a lot more maneuverable at slow to medoum speeds than flying fast. High G sets in when you fly fast and pull the jet into a sharp turn. It does not look as cool ( well its relative ) but it is really taxing on the body even though most modern planes are limited to 9G in order to prevent overstressing the airframe and give that poor human a chance to stay in active duty longer than 2-3 years lol.

The approaching AIM-9X watching me do this: Well, thank you *VERY MUCH*
Edit: Missiles don't track and follow, they track and INTERCEPT by calculating where the plane will be after a given amount of time. By doing this you're just exponentially increasing your cross section and throwing away any chance of outmaneuvering the incoming missile (it will just correct it's path in a second and that would be it)
