I'm 21 now and I have a friend from Japan studying abroad. I cook these meals for her whenever I can because it makes her feel more at home since our area doesn't have a lot of Japanese food. I'm from Central Europe, back in highschool one of my teachers knew I liked Japan, so one day he pulled me aside and told me a story about his grandpa: he really wanted to visit Japan, too, but back then it was nearly impossible to travel that far, especially for a commoner. Then WWI happened, he ended up joining the Legions, and because of how they protected the Transsiberian from the Bolsheviks (it's a fascinating period, I recommend you look it up as far as you're interested in history), they ended up going home by going to Japan, where he's spend some time, then to the US, and eventually finally back to Europe and home. I'm gonna tell you what my teacher told me back then: if you believe in it, you're gonna visit one day. Life is unpredictable like that :)

the fact that wasabi only grows in such clean & moving spring water is the reason why its so hard to cultivate and is barely grown anywhere outside its natural habitat.
combine that with the fact that wasabi looses its flavor really quickly after harvest and you understand the reason why wasabi gets exponentially more pricy the further away you get from these farms. the stuff sold as wasabi in the west is usually regular horseradish dyed green and only contains a tiny amount of actual wasabi for flavor
@@TheScarvig sadly you´re totally correct with the latter! Since last year we have even a Wasabi farm here in eastern Austria (Europe), but they charge 60US-$ for only 100g fresh root!

That was a fun blog, it did look so tasty! It’s nice to see and hear chefs likes around other foods too. I didn’t think it would be slightly salty, but some butter cookies do the same thing to bring out the sweetness and richness of the other flavors.
