Hi Ling and happy new year to you too and the hubby. I've made similar but used regular mushrooms. I plan to locate seafood mushrooms when I go to the Chinese grocery store in March if all goes well. Still making Chinese foods most per week. The family really enjoys it and getting more creative when it comes to recipes. I too remove all fat ( never use pork belly ) and I never use added salt as my body doesn't respond well to it. I'm planning something special for the Chinese New Year on February 1st. so when i went to my asian market and got these seafood mushrooms they smell like the sea...but i put kimchi and other mushrooms with them they pretty good if they don't have that smell..

They look like mushrooms that we find in Japan, except here they're called shimeji. The seafood mushrooms look really white, I wonder if they're grown in total darkness?

What the flavour profile of the seafood mushrooms? Mild? Earthy? Never had them but they remind me of enoki but on steroids. 🤣
