This coconut fudge is sweet with a coconut-chocolate flavor and melt-in-your-mouth texture. It stays solid at room temperature, so unlike many raw fudge recipes, it’s also portable. The recipe is vegan (dairy-free, egg-free), grain-free (gluten-free), soy-free, nut-free, and refined sugar-free.

@@dolcemaddalena Hi Maddie, I know I am responding really late, but I am just seeing your comment. Cocoa butter is a great substitute for coconut OIL although it does have a very distinct aroma. I would not substitute coconut BUTTER for cocoa butter because coconut butter is whole foods (it’s dried coconut meat) whereas cocoa butter is pure fat. Coconut butter is very similar to other nut butters, not really cocoa butter. If you’d like to make fudge with other nut butters, I recommend this recipe: nutritionrefined.com/chocolate-fudge/
You could sub the coconut milk for cashew milk. If there is a specific recipe on my blog that you would like to adapt, just leave a comment under the recipe (I don’t always check UA-cam comments but always reply to my blog comments). I will do my best to suggest some alternatives.

I would LOVE to try this out, but my husband and I cannot have coconut, almonds, peanuts, and soy among many others... I've been using your recipes for almond milk and coconut butter before I found about the sensitivities, and now I'm using your cashew milk and cream recipes. I still love your recipes and know for certain they work! So thank you for this recipe and all the recipes you share. They are truly amazing.

Petra, how much melted of chocolate Did you add?
Hi Larisa - I added ~ 1/3 cup of melted chocolate. The less you can get away with, the better (in my opinion). When I was testing the recipe, the chocolate would affect the texture of the fudge quite a bit. The more chocolate you add, the less of a fudge texture you get. The chocolate causes the fudge to harden in the fridge and melt at room temperature. The pure coconut fudge is more stable that way - it doesn't harden quite as much in cold temperatures and just slightly softens at room temperature (unless the ambient temperature is really high).

I made homemade coconut milk and the following day the top hardened. Is that the same as coconut butter??? Or can it be used in this recipe?
Hi Sylvia - did you use shredded coconut to make the milk? It sounds like the coconut you are using contains quite a bit of fat, which then hardens in the fridge (just like coconut oil would). It would not be the same as coconut butter because coconut butter contains both the fat and fiber from the coconut (you are straining the fiber when making coconut milk).

I was wondering if you use 70% dark chocolate since your husband said it’s sweet. Would it possible to use 100% pure chocolate melted then mix in?
Hi Ima - I used 65% chocolate because anything darker and my kids wouldn't eat it. I love dark chocolate though, so use any percentage you like. It doesn't matter for this recipe. Obviously, the chocolate will affect the sweetness of the fudge.
Hi. GREAT RECIPE!!! I learned something new. Now I know why my store bought coconut butter ruined my new ceramic frying pan. I was thinking it was just fat like dairy butter. It isn't. There is a big difference between coconut oil and coconut butter. There was nothing I could do that worked to clean that frying pan. Had to throw it away and buy a new one. LOL..... OK. Petra. can I ask you a question? I am a spirit filled Christian with a health issue. Some time ago in a prophetic dream the Lord encouraged me to go vegan (He said do what the propet Daniel did) and that has really helped. It has made a difference. Recently a prophetic dream warned me not to touch any food I eat to metal (including stainless steel). I found an FDA research paper that admitted stainless steel rusts, and they know they have a problem, but they don't know what they can do about it. Question: Do you know of any high speed blender, or any blender at all, that does not have stainless steel blades -- like say ceramic blades? Not being able to use a blender or food processor has thrown me for a loop. Thanks.
Thank you Colin! Haha, yea, coconut butter is not pure fat :) Hmm, the blender issue is tricky. I honestly don't know. There might be something on the market (considering that you can get ceramic knives, scissors, etc.), but I haven't heard of anything. Sorry!
@@nutritionrefinedasmr7025 Thanks. I thought if anybody would know it would be you. I bought ceramic knives and they are three times better. Sharper, easier, safer. Big surprise. Never going back. I found a hand crank ceramic seed grinding mill, a hand crank stone grain mill, and a hand crank all plastic maciating juicer. I can put a pyrex bowl inside my instant pot. It is really frustrating not being able to use my blender, food processor, or wonderful immersion blender. But it has been about a month and I do definitely notice a difference -- especially with regard to brain fog. Heavy metal poisoning has been associated with demential and Alzheimer’s. The Japanese for years have proven that organic unpasturized miso removes toxins, heavy metals, and radiation poisoning from the body. It is a miracle food. I have a bowl of it every day. My chronic head ache is gone. Thanks. Over and out.
@@colinkelley6493 Hi Colin, I totally missed your comment. I am sorry! Thank you for taking the time to share your experience. We love miso soup in our house. My kids ask for it all the time. I used to follow a macrobiotic diet for many years, and miso is still a staple in our house.
@@nutritionrefinedasmr7025 Hi. God bless you. What follows is going to be a huge revelation. Forty years ago I had a crushed vertebrae and a pinched spinal nerve. It was very painful. I was told by a very good back surgeon it was too damaged to be operated on and I would never sit up or walk again. I read a book about a Japanese doctor who was living in Hiroshima when they dropped the atomic bomb. In the early 50's the Japanese medical profession wanted to know why he was still alive and so healthy. He definitely had had and had recovered from severe radiation sickness. He told them that for many months he was too sick to eat, but he had a cup of miso in the morning and a cup in the evening. The Japanese then did a very thorough research project. They found that miso removes radiation, heavy medal poisoning, and every toxin they tested. It has to be organic and unpasteurized. The enzymes are what works the magic. Pour hot water over it, but don't boil it. I combined that information with what I learned from two other books -- "The Body Electric" by Dr. Becker. And "Biological Transmutations" by Kervran. They were written a long time ago but you can still buy them on Amazon. They complement each other. They are still relevant. I deduced that if I combined horsetail tea with the enzymes in miso, the silica from the tea would transmutate into calcium and heal my back. I also took B50. So I tried it, and it worked, and only took three weeks, and I was completely well and could go back to work -- I had been flat on my back in pain for over a year.
