- These Costillitas de Puerco en Salsa Roja are way up on my list of favorites, it's a very easy dish to prepare. I like using St Louis pork ribs because i think they are meatier than baby back ribs, but Baby back ribs and Pork Shoulder are great too. I think that fresh ground spices especially All Spice, Whole Cloves, Cumin and Oregano are a must in this dish and that is what makes it unique. I hope you give it a try.
INGREDIENTS---------------------------------------
3 1/2 lbs. St. Louis ribs (cut in half long way then ribs separated)
Salt (as needed)
3 Bay Leaves (in pot)
1 C. Water (in pot)
INGREDIENTS TO ROAST AND BLEND------------------------
5 large Roma Tomatoes
1/2 medium Onion
4 Garlic Cloves
1 Serrano Pepper
4 Chile de Arbol
2 Chile Guajillo
1 Tbs Chicken Bouillon
1 1/2 C. Water
INGREDIENTS FOR MOLCAJETE----------------
1 tsp whole Cumin
1 tsp Peppercorns
1 tsp Mexican Oregano
3 Whole Cloves
5 Whole Allspice
EXTRAS---------------
Beans
Mexican Rice
Corn Tortillas

Rachel, I finally figured out what I love about your videos. You give just enough info when cooking. No excessive talking so the videos are the right length for me. Lastly, you make your videos up close when filming them. I can see right in your pots and pans while the food is cooking. I can determine the color of the food. Other cooks have the camera too far from the food so it’s too hard to determine if the food is being cooked properly. Keep up the good work. TY .

Rachel, I followed the seasoning ingredients for your recipe for carnitas and the aroma was so beautiful! I poured the remaining liquid into a jar and after refrigerating overnight I skimmed off the lard and used the flavorful liquid as the base for the most delicious soup ever!

I figured out what made the aroma so lovely was the combination of the citrus juice and zest from the orange, lime and a wad of fresh thyme from my flower bed. I grow a bay leaf bush, oregano and thyme in between plants and flowers. Fresh herbs make all the difference. I wash them thoroughly and shake off the water between kitchen towels, then strip the leaves off and air dry on a baking sheet and fluff the leaves about 3 times a day for about 3 days. Store in labeled Ziplock bags forever fresh in the freezer. I share them with neighbors on my cul de sac. 😊
@@goriousglorybelieve it or not, I sauteed onion, garlic, & celery in a little olive oil for 3-min; added 2 quarts of beef broth and the pan juices from the pork carnitas to the pot and brought it to a boil. Then added meatballs I'd made & pre-baked lightly and added sliced fresh brown mushrooms & 2 peeled & diced carrots. While the soup simmered gently, I combined one envelope of unseasoned matzo ball mix with, a few shakes of Trader Joe's mushroom & Co. Umami seasoning, 2 eggs & two Tbls oil & refrigerated it 15 mins. Then, I added a small PKG of frozen carrots, peas, and a few small halved new potatoes and turned up the heat to bring to a rolling boil while I formed the matzo balls with oiled hands. Once the soup boiled I added the matzo balls and let them boil gently following box instructions. Taste tested & adjusted seasoning throughout. This is my best effort to recall what I threw together. I took it to a friend's house with artisan bread and we gobbled it up. It was a delicious multi cultural soup.

Thank you so much, it's a Mexican olla (clay pot) I got it in Mexico, I wasn't using it often because I had an electric flat cook top, but now I have a gas stove and will be using it more often.
