Bypassing the ammeter on any older Chrysler product is a good idea in general even if the alternator isn't being upgraded

What's alternator capacity got to do with anything? The key word being capacity.
Firstly I'm not saying the ammeters in these don't give trouble, but as a general principal a 200a alternator if it only has a 5a load on it then that's all it's going to output. It isn't going to output 200a because it's a 200a alternator unless there's a 200a load.
The problem with the ammeter might be if you start putting continuous 70a loads through it, since the OEM at the time was 35-45a depending on whether it had OEM aircond and the ammeter was only ever designed for loads in that range.
Big alternators don't blow things up because they're big per se, what they have is potential. Potentially, a 200a alternator can output 200a meaning massive electrical headroom available over say a 35a alternator. A 200a alternator doesn't blow things up just because it's there. A fault or a situation beyond electrical engineering limits has to be present.
In your case I'd say the ammeter issue may be caused by whatever is causing that fusible link to overheat.
I have had many of this era Mopars with these over the years and I've used alternators up to about 85a but in all cars the ammeter never had an issue though to be fair I certainly have seen faulty ones in customers cars. `

Yeah I’ve dealt with this on my 68 coronet . Now I have an American auto wire to get rid of it all together. It’s just a poor design from mopar and will cost you a car
