This baklava recipe was handed down to us and it’s the best one yet!

  • I apologise, this one didn’t make it online before Eid. I tried my best but time ran out. I’m sharing it anyway so that you save it for next time, or a special occasion or your next party, trust me, you’ll want to try it.
    Baklava by @fehmz
    (original recipe from Aunty Sylvia)
    1 box of Phyllo pastry - 14-16 sheets
    200g melted butter
    2 cups nuts
    (A combination of chopped walnuts, pistachios, almonds/nibbed nuts)
    3-quarter cup breadcrumbs
    1-third cup castor sugar
    1 tsp ground cinnamon
    2 cups granulated white sugar
    2 cinnamon/cassia sticks
    3 cloves
    1-quarter cup honey
    Juice of half a lemon
    1.5 cups water (375ml)
    5 ml orange blossom water (optional, leave out rather than look for a sub)
    First, get your syrup on the boil, add the granulated sugar, cinnamon sticks, honey, lemon juice, cloves, water and orange blossom to a saucepan on medium high heat and bring to a boil to make a sugar syrup. Leave to cool slightly then transfer to the fridge to cool completely.
    Preheat your oven to 160deg C.
    Now, separate your sheets so that you have 5-6 sheets for the top, 2 sheets for the middle and the balance (6-7 sheets) for the bottom. Keep them separate.
    Use a 30cm x 40cm pan or larger, whatever you prefer. Brush the bottom generously with butter. About 4-5 tblsp.
    Now add your first layer of phyllo, brush that sheet with melted butter, continue until all the “bottom” sheets have been used, brushing between every layer including the last “bottom” layer.
    Nut mixture:
    In a bowl add the nuts, breadcrumbs, ground cinnamon and castor sugar. Mix.
    Spread half the nut mixture on to the phyllo. Layer two sheets of phyllo, buttering each layer. Add the balance of the nut mixture.
    Close the mixture with the remaining “top” layers of phyllo, brushing butter between each layer as well as the top of the final layer.
    Cut into your desired pattern/shapes.
    Bake in the oven at 160deg C until golden brown approx 45 mins.
    Remove once done and while the pan is piping hot, pour over your cold sugar syrup and listen to it sizzle and absorbed.
    Decorate as desired.

      Aaaah Shukran! I got the orange blossom water in Morocco but there are a few places that sell them, I don’t know exactly to be honest.
