Although the video title says "How to Clean a Stainless Steel Griddle" this is simply the way that I do it. If you or someone more experienced has instructed you to clean and maintain the grill differently, proceed accordingly.
I have to say I’m so glad I found this, cleaning the grill at chipotle with the way they want me to do it, I spend about 35 minutes just scrubbing with the block. It’s horrible thank you!
The block isn't what you should use every day to clean it... And if you used this on a griddle, they should fire you. This stuff is not for a griddle.

Why shouldn't this be used everyday? Because you'd have to clean it twice essentially. That'd be a complete waste of money. If it's seasoned properly, then it maybe would need to be super cleaned with chemicals once a month. Question: would you use this to clean a skillet?
@@Adventist1997 If it’s a skillet with layers upon layers of gunk stuck to it from not being washed after 200+ dishes a day, sodium hydroxide seems alright.

I don't know how you'd get it that dirty if you seasoned it properly. The food should easily wash off. But like I said, using chemicals is only a once a month thing. Unless you're really bad at seasoning the Griddle, then I guess once a week.

I used to clean the grill with just a scouring pad and fryer oil for 2 years. 20 years later I still have calluses from it. Anyone saying you can just do it with elbow grease and time hasn't spent enough time scrubbing the grill yet.

Hopefully this guy ment grill screen and not scouring pad which would be bad. Yes its way more elbow grease than using chemicals but I prefer not to use chemicals on my cooking surfaces
I have cleaned flat tops thousands of times in my time in a kitchen. The main one i use/clean is massive, probably around .6-.7 meter radius circle. It can fiy a ton of food on it, 20+ stir-fries, 30+ 3oz pancakes ect. I can get it from being completely blackened to spotless in under 15min depending on if the everything is in stock.
The way I clean it is
I start by turning it off and putting some oil on it, then using a grill brick on it. Next i scrape the oil and brick remnants off the grill. Next I poir our grill cleaner onto it, (its food safe and considered to be G.R.A.S) spreading it around with some paper towels. I let it sit for a minute or two bedore scraping it off. I then rinse the whole thing off with plenty of clean water, squeegeeing it off. After i clean the large trough out. Then I use a cloth to make sure the whole top is clean. Finally once it has cooled completely i spray the top down with oil and use a cloth to remove any excess oil.

When i worked at McDonald's, cleaning the the grill was very satisfying. I really liked their 2 handed scraped! And the silicone squeegee, it was ocd satisfying
the teflon sheet on the platform is a pain in the arse though...

personally, I’ve found that soda water agitates the gunk of the flat top enough plus being pretty cheap. Then again I haven’t tried in on to many grills so that it with a grain of salt. Keep up the good content!

I have never cleaned my flat top with chemicals and flippers.
I use a grill screen followed by a grill block till it’s clean. Then i wipe it off with seltzer until the paper-towel shows no residue. Usually 2-3 times.
Then using a fresh paper towel I preseason
reseason with veg oil.
30 year old flattop looks just as good as the day it was new. Never had a drop of chemical on it
What do you do for full reseasoning. And how is stainless steal differ from others griddle. The one at my work is awful at temperature fluctuations, we have to clean it many times during service .

Don’t use equipment for food, also for mixing chemicals. If you’re using a stainless steel bowl to mix chemicals, then it can only be used for that purpose.
What do you think cooking is? Exactly, mixing chemicals.
Could it be that we didn't see you wipe down the utensils you use? Because it would probably not be as good to use the utensils with cleaning agents still on it to spread the canola oil. Just a remark, not judging.

Mate recently... I was working for Applebee's in TX. All of our sides. MICROWAVE kids pizza Microwave. Ribs. MICROWAVE🤮... undercooked steak. Microwave. Do you think the cooks aren't overworked and underpaid? With ABSURD expectations of under 7min tickets thru and thru. Showing up at 4pm to be the only cook till 5 so I'd get slammed working fry. Mid. And Broil.. and don't forget that these customers want to modify everything as it's almost encouraged... not to mention the fact it'd be like an 8top with 3 adults 5 kids followed by a 2 top and 4 top so 14menus open in under 10min.
I've been unemployed for atleast a month which is entirely my fault but I was so burnt out and they scheduled me to open FOH. Then switch to cooking at 4-11pm. 2nd cut which is crazy beacuse I was a double.. but the 1st cut was an amazing cook that would complain or walk out if they didn't give him his way.
Long story short as someone with years of experience trust he is actually doing amazing by really cleaning and going through the process. Please refrain from unfair judgements as this channel is inspiring and he appears to listen, learn, and do each job as instructed. Keep watching too You'll see him BLANCHE some asparagus soon.
Just frustrated you'd complain about him Microwaving Veggies when there so so much worse being done. Not saying it's right just saying that could be the pubs STANDARDS so don't hold it against him and if you don't like. Cook at home!

Why?
Canola is genetically engineered rapeseed oil. The first canola plant was invented in the 70s, as a way to get around the rapeseed ban, since rapeseed oil was destroying people's hearts, and the fumes were destroying people's lungs. Genetically engineered canola is just as bad in different ways. It's closer to being an industrial motor oil than a dietary oil. It is used to make plastics, lubricate industrial machinery, and as a pesticide. It should not be used for human consumption, and lots of people should be in prison for selling it. When heated, the beneficial omega oils breakdown into extremely toxic oils. It will destroy your health over time. You can count on it.
