Another beautiful cook, Andy! FYI for a bit of food nerdetry - masa harina makes the best tortillas! The process to make the harina is that they take the corn kernels and soak them in a slaked lime solution which softens the corn and removes the husk, then they're milled to a flour. In my opinion it makes for sure a superior flavor to the humble flour tortilla.

I must say, that looks fantastic. I live in San Diego county and there are Mexican eateries every where. This reminds me of the small stands you find sometimes in SoCal. They trim pieces off those towers of meat and on man is it good.

As somebody who has been eating Al Pastor tacos for years I wanted to say that yours looked fantastic! the direct fire roast is definitely the way to go. -Shane from Texas
I know some things about Gyro. When I use to live in Milwaukee there is the original Gyro Shop. The way you did your Gyro meet is similar to the way the Greeks do it. Only they use Lamb's meet with various spices. Served in a pita with the Tzatziki sauce with onions and served with a Ceasar salad and fries.

In Greece, gyros are normally made with pork. The Turkish doner kebab is usually made with lamb.
