How do you determine minimum wrist size? I would think your 16cm wrist is slightly too small for that watch but apparently, 15cm is enough?

It's just his (professional) opinion. In my (amateur) opinion he usually suggests wrists sizes that are too small for a given watch -- he has been doing so for years.
