Cannolis recipe - first time try with plenty of mistakes haha

I have a friend who reminisces of the cannolis that he ate in Boston and so for his birthday, I decided to attempt to make him some! It's my first attempt and I made plenty of mistakes though so hopefully you can avoid the ones I made! But cannolis are so delicious! And I never knew that they contain marsala wine!
I used this recipe for the cannoli dough:

Ingredients:
Dough
250 grams (1 3/4 cups) AP flour
18 grams (1.5 tablespoons) sugar
1/4 teaspoon salt
3 tablespoon (43 grams) unsalted butter, diced
1/3 cup marsala wine
1 egg
1 egg white
Oil for frying
Filling
15 ounces whole milk ricotta, strained
1/2 cup powdered sugar
Vanilla bean paste
Pistachios
Mini chocolate chips

The better cannoli forms have a longer side, that is for the round part of the circle, the fullest part. When you pinch the dough together, make sure it seals. It is best if you can flange out the dough on the edges so the tubes will open out at the edges. Also, you should have more oil to fry them in so the whole cannoli is in the oil and you don't have to spin it, and it fries evenly.
