Easy Chicken Cordon Bleu
RECIPE COURTESY OF GIADA DE LAURENTIIS

Yield: 4 servings
Ingredients
3 tablespoons whole-grain mustard
2 tablespoons mascarpone cheese
2 tablespoons olive oil
Four 5-ounce boneless, skinless chicken breasts
Kosher salt
4 large thin slices Emmentaler or Swiss cheese (approximately 4 ounces)
8 thin slices Black Forest ham (approximately 4 ounces)
Directions
In a small bowl, mix together the mustard and mascarpone. Set aside.
Preheat the broiler to high.
Heat a large ovenproof skillet over medium-high heat. Add the oil and continue to heat for an additional 1 minute. Sprinkle the chicken breasts evenly with 1 teaspoon salt. Place the chicken in the skillet and cook on the first side until golden brown, about 4 minutes. Flip the chicken and continue to cook until just cooked through, about 2 minutes more. Remove from the heat.
Lay 1/2 slice of cheese on each chicken breast. Lay 2 slices of ham on top of the cheese on each breast. Divide the mustard sauce evenly over the ham and top with the remaining cheese slices. Broil until the cheese is melted, golden brown and bubbly, about 2 minutes.

I prefer the fine dining version where the meat and cheese are baked inside the chicken breast, and coated with a panko crust.

For sure but this is a simplified version that works for people who don't cook much or who are busy in their lives. Also like she said it is great for kids who have the palate for it.
There's not much difference to the breaded version. Just cut the chicken breast almost in half; unfold; add what she did and roll it up. Then dip it the egg; flour and breadcrumbs. Then bake. It's so easy like chicken parmesan and you don't have to pay the restuarant price. Plus you will have another meal for the next day or two.
Looks good and and an easy version using some of the same ingredients that make Cordon Bleu so tasty!

This isn’t chicken cordon bleu. The way that you make chicken cordon bleu is you flatten the chicken breasts, then put the cheese and ham on them, and then roll them. After that, you dip them in breading and bake.

I’ve hosted a few height school sports dinners in my time and believe they would not have wanted chicken cordon bleu. More like ANY kind of pasta, Mac and cheese, pizza, nachos, wings, etc....The cordon bleu plate wouldn’t have been touched.

The cross contamination that went on with those tongs makes my stomach hurt.
They touched raw chicken and basically nothing else, and the chicken continued to cook and then went under the broiler after she flipped it. When she put them down on her main cutting board, the ends of the tongs weren't touching the board. After she flipped the chicken, she put them aside. Where's the cross contamination?

The salt from the ham would be enough.. and this is a simplistic fast family meal version. I am going to give her version a try tonight. Definitely less calories than the way I was taught to make it.
That is plenty of seasoning with everything else she put on the chicken. Sometimes simple is best so there aren't a ton of competing flavors. Personally I would also out some pepper on it, but I love pepper and add it to everything.
