Not the small ones, we throw that back to let it grow; but all I do is gut it, give it a good wash, salt and pepper and your good.
I marinate jack in milk overnight and it gets whiter. The meat is firm, unlike most fish. The problem is a day later and you burp and you taste jack again. It was unusual seeing the Baker's Haulover jetty empty. I am enjoying your videos
Yeah, that would work too. I would otherwise season jack heavily to make it taste pretty good, but i dont like having to put a ton of seasonings into my fish.

On a side note, I didnt think your filleting was terrible but one thing I was taught by my dad, when I was young, is to start cutting around the fillet on one side to get it started and tyen flip it over and do the other side. It makes it easier with fillet still on the other side rather than filleting with one aide flat on the table.

Good video dude! I never fry mackerel or jacks. There are certain fish that need to be pan seared, grilled or blackened. Check out my video for cooking jack crevalle for your next catch and cook with jacks.
Try cooking it this way. This how we cookit here in the Philippines :) Just gut and scale the fish. Fry it whole with just vegetable oil or canola oi till it's golden crisp and season with salt and pepper, tastes great! On the side for your dipping sauce get some soy sauce mix it with some lime and chili peppers! Should be great!

When I catch a Jack it got to be five pounds or less if I'm going to eat one first thing to do is bleed it by cutting the gills? Then ice the fish. When cleaning make sure to cut any of the darker red meat along the lateral line and just under the skin make sure to also remove skin and cut to let in half. Now rinse well in cold water and marinate in Italian dressing over night p. Now heat up the grill get a fish basket put your filets in between the basket still covered in dressing vast with melted butter with lemon pepper and dill slightly blackened filets. They will taste like a pork chop my daughter is a chef and says if the flesh is dark on a fish treat it as beef and you can't go wrong. My grand kids thought I made pork chops a d put ketchup on them.
Another fish you have to do a catch and cook on is lizardfish. I know a good place that has a ton of them. And if/when they are around, do a catch and cook pilchards/scaled sardines.... in other words, catch and cook salrwater baitfish lol

Meat is a grayish color and texture is chewy and sticky. Smaller bluefish 4 to 6 pounds are the best ones, while juveniles up to 12" are the ones most people prefer. The older the fish, the stronger the flavor and meat more oily.
Jack fish is born in the OCEAN. And ALL ocean fish have blood lines and i noticed in your amature video you didnt cut the blood line away.. I think you should next time get someone who knows what there doing...prepare the fish for you.. Someone like that kid in the video...he seemd like he knew more then you...
My brother caught a giant one & he didn't like it because it was really red meat. He tried to fry it & it didn't come out good at all. I would think you would have to pay seared it like salmon to make it edible. Nice vid though. I enjoy watching them
Zack E. sheep's head is good boiled and made into fish cakes but Ray is plan bad I've heard bad and good so I caught one took it to my dad's we took the wings off and tried them and it was terrible it gets a grayish color to it very smelly and fishhhhy with a rubbery texture so I don't recommend but sheep's head heck ya lol

In Hawaii they're called papio/omilu and over 10 lbs is considered Ulua, really good eating

Battering the filets and then put back in fridge for 2 hours, then cook. The batter sticks to the meat much much better that way.
