As a 2020 Crosstrek owner, this is accurate. Driver and the "spotter" were absolutely terrible. I took the Crosstrek up Burns Canyon Rd. which in parts is much steeper and heavily rocked. The Crosstrek went up smoothly and confidently like a mountain goat with just feathering the throttle. It's not rocket science. You keep it floored all the time in situations like this and the CVT will give up straight away.
Traction control is part of the VDC system. You can only turn traction control off via the button but above 37mph it will come back on. Turning off Traction control in that situation will not help him. The system is needed to brake the spinning wheels and send power to the others that have grip. X-mode makes the reaction time of the locking system better. You turn off Traction control if you drive in sand/mud/snow.

Even in X-mode, but especially when not using it, it's crucial to remain on the throttle for several seconds to give the computer time to sort out what is going on and brake the spinning wheels. X-mode should do this very quickly, but just stay in the throttle and let the computer work... within reason of course. Even the older models with VDC, but without X-mode, should pass your basic and even surprisingly steep diagonal tests.

Turning VDC off is really only beneficial when wheel spin, speed, and momentum are required. When it comes to slow technical driving it is far better to leave VDC on and engage X-mode if applicable.
Better vid. I think they had the all-wheel torque distribution turned off X-mode. Not sure why you can turn X-mode on and off but there is a reason. It looks like it preforms well off- road with proper tires. Off course this is a car that handles quite well in turns on paved as well...low center gravity. Thats why its named crosstrek, it does both.

Turn off the traction control (VDC) so you have full engine power. That’s why you’re stalling out! And make sure you have X mode engaged.
