Handling Order Delay Process 3. Forgot Password 4. Order Cancellation (assume business allows cancellation) 5. Customer Care Enquiry or Dispute Resolution and could be others
I am an experienced professional. But seeing something like this is very helpful even after so many years of exp. You nailed it. Simple and easy to understand. Visual is the best way to learn/understand any technique.

The first release here is basically the MVP. However, delivery teams may not have the velocity to ship the entire feature as seen in this case for the first release hence, they have to MoSCoW the stories again until they have story estimate that meets the velocity of the team. The workshop elicitation method is better as it allows stakeholders across different aspect of the project stream to interact and reach a consensus.

This is Episode 1. It introduces terms like 'Product Backlog' at 1:28, but doesn't explain what it is. Is there another video in this series that I should be starting with?
I personally feel the Payment epic with various user stories for cash, debit card, internet banking, and payment should have all been merged into one user story.
Good presentation, but you are a bit to far down in the hierarchy of Jira for this to work properly. What you describe is the BA process on the business side where the story mapping is an excellent tool. This is not the requirement analysis however because the end result of the BA process will be business needs and features, not epics and user stories. A user story can not be larger than 80% or the length of a sprint and I see several user stories that are much bigger than that. That is because they need to be broken down further into smaller parts. If you do not have advanced roadmaps, so you can extend the hierarchy then you could make a sideways hierarchy where you have a business project, but then I would suggest to use different issue types like requirement and feature to replace task and sub-task. Otherwise, you will have confusion over naming very quickly. Overall however this is one of the better videos I have seen of how to best use user story mapping for Jira :)

To me, those (eg Grouped by Categories, Search by Keyword, Registration, etc, etc) are NOT User Stories; those are features. Several User Stories will be listed under those features.
