This looks delicious, but I think I'd be inclined to try it with hard poached eggs rather than fried. That way I can get the pure "boiled egg and mayo" flavor of traditional egg salad without the hassle of peeling the shells.
I will definitely try this way this week. In my egg salad I prefer scallions/green onions/ “échalottes” as we called them in Québec. I find that they are easier to digest - or fresh chives from the garden. Also like salt, pepper, paprika, some times celery salt or whatever inspires me from my spice cabinet. Maybe a dash of Dijon or some roasted peppers. So many possibilities... whatever I’m in the mood for on that day! Eggs are so versatile!
This looks AMAZING! My favorite is Egg and Olive...just eggs, green salad olives with pimentos, mayo (Dukes, of course), and a little yellow mustard! If it's too thick, just loosen it with a tiny bit of the olive brine. Sooooooooo good!
I can’t wait to make this. I love egg salad. I grew up with an egg and olive salad sandwich which contained jarred green olives containing pimentos. Not sure how this combination would be made warm. I’m thinking I am going to love your recipe.
Love this recipe idea, thanks Kristen! I add chopped kalamata olives and cornichons to my egg salad. I feel like the add-on possibilities are endless for this one. Will try soon!
Thank you, too many people suggesting dill pickles here. Sweet are a must! Either chopped or relish. And mustard of course. You must make good egg salad! :)
I use sliced sandwich pickles in mine and chop them up. I believe Bick's calls them "Yum Yum" pickles. It brings a touch of sweet and brine to the taste. /this is my 2nd comment on an egg salad video //what happened?
I love the deviled eggs that my hometown butcher made so I use some of the same ingredients in my egg salad: dijon mustard, thinly sliced green olives and paprika. I also add finely chopped onion. I made it the other day and a friend loved it.
Back in the 60's my dad had a drugstore that had the old style sandwich/soda bar and our egg salad had chopped black olives. To this day it's still my favorite. Try it.
My favorite egg salad is with Kefir cheese for that tart element and feta. I add raw garlic, lots of pepper and salt. I cook my eggs till the yolk is just barely all the way set....like 9 min. Then I use a potato masher to mash up the peeled eggs and add some Kefir cheese, feta, crushed garlic cloves, pepper and mash it all together. Sometimes though....I prefer to just make egg butter instead of egg salad. Egg butter is a Finnish thing. It's supposed to go on top of Keralian Pastries but I have coopted it as an easy egg salad substitute. It goes the same way as for the egg salad but instead of adding all that other stuff you add a small nob of butter and mash till you get a smooth paste. It helps if the eggs are slightly warm or the butter is room temperature. You can salt it but I usually don't. I don't know what it is but the combination of egg and a really good butter is sublime. There is just something about it.
I work for a Finnish family and keralian pastries with Egg Butter are So delicious and so different from anything else. The egg butter is not something I would have ever come up with but I loved it
I LOVE adding a touch of yellow mustard. If you do not like celery celery seed is also nice. I am on the east coast we also add a little old bay seasoning
When I make traditional egg salad I use a pastry dough cutter to mince the cooked eggs, I wonder if that would work for this preparation rather than the scissors.
I will sometimes add pickles, dill. Other times I'll add peas, carrots, and corn (sometimes fresh, sometimes frozen). My favorite way is way mom makes it with celery, potatoes, and mustard.
I haven't tried making this yet, but my family used golden mustard and red wine vinegar for our egg salad. I'm going to add capers, celery and either shallots or chives.
Egg salad ingredients All Organic: Egg, pasture raised by a local small farmer Celery Locally made organic pickle relish, like for hot dogs Dill Parsley Avocado oil mayo Mustard Turmeric, just a bit Lettuce, tomato Sourdough bread, with some organic, grass fed pasture butter Personally, I like some capers, too, but not my family. So I add a few just for my sandwich. I don't add onions, but sometimes a little garlic powder. Onions just seems to turn it from salady to omeletty.
Mustard in addition to mayo for brightness. For this type of egg salad I could see adding chopped olives or mild pickles but I think buttery castelvetrano olives would be excellent in a warm egg salad. They cut the fattiness of the butter the eggs are cooked in and the added mayonnaise. Making this soon I think.
First I need pickle relish and some sort of mustard, pepper, and paprika added, plus I would probably use a potatoes masher to make a more smooth salad texture. I have made Potato Salad from leftover cold mashed potatoes as well. same ingredients as this but with potatoes added.
I made it with a lot of ham cut very small and diced onions. The onions got dark brown but we're great . This was very quick and easy.. I am thinking of trying it with the tamagoyaki to see how it goes with flavored scrambled eggs. No relish for that one
This for sure feels like something my lazy @$$ would have come up with in College... Not that this is a bad thing (at all.) Just feels like a big-lazy-brain discovery. I'll give this a shot.
The best part of hard steamed eggs is that they are so portable and don't need any packaging to take for lunch somewhere. They come in their own little protective jackets.
Looks delicious! I’m a big fan of finely chopped cucumber and chives in my egg sandwich. Not a big fan of celery. Endless herb combinations. Also try half Mayo, half sour cream or yogurt.
Beautiful recipe! This could totally 💯 be veganized with JUST EGG and some vegan Mayo. Delicious!!! Warm, it’s more scrambled egg, but cold would be more like egg 🥚 salad. No reason why you couldn’t serve this cold with some nice Dijon, Mayo, cracked black pepper, chopped celery, chives, and some fleur de sel.
For my preference would be. After you fried ham and onions. I would've cut the onion stripes smaller. Cook all of your ingredients longer on lower temperature. Lid to seam as in your video. For me, after you flipped fried eggs into the bowl, underside of the fried eye is too brown for me. Give it that over cooked crispy taste. Lower heat and seam will not char the bottom. I like dill weed in my egg salad or celery seed. You might add smokey pimentos and make sure the pimento pieces are drained. Make your salad mush. Your voice is so calm to listen to. Lovely presentation. Your video was well done. Lighting was a bit dull. Hard to see the real end results. Thanks for sharing 😋😉 forgot...yes, dab of mustard. You can add any tasty green leaves minced for added flavor. Paisley, celery greens, green onions.
Any ideas for what to substitute for the ham for those of us who don't eat meat (fewer and fewer it seems in the 45 years I haven't eaten meat; just saying) ?
That looks interesting, but if you want traditional egg salad, an Instant Pot will cook eggs (steamed rather than boiled) that peel perfectly every single time. It honestly takes a few seconds to peel one. I now (well, pre-covid) take deviled eggs to every function since there is zero danger of ending up with mangled eggs.
These are the mix-ins at our house. Spring onions or chives, celery, caraway seed, pickled red onion, capers, bean sprouts, Dijon, horseradish, Mayo, Spike Seasoning! Not all at the same time, just choose a few!
I add dijon mustard, celery leaves, and onion powder (I don't like the taste of raw onion). I leave the egg very chunky, and only add in the yolks once I'm satisfied with the seasoning, so the yolks maintain some integrity and don't become just part of the mayonnaise mush. I'm excited to try this version of egg salad!
My egg salad requires a creamy note (usually mayo, but I've also used hummus and other dips), a pickle ingredient (either relish or something like pickled onions), and an herb of some kind (cilantro/coriander leaves are my favorite, but chives or spinach are also great).
People, people, people. Steam your eggs! Straight from the fridge. Do NOT overcrowd the basket. They will have issues where they touch. For hardboiled, 15 minutes in constant full steam. Then right into ice water for 15 minutes. After that, drain some of the water. Seal the container and shake vigorously. If that doesn't loosen/remove the shells, roll them gently on a surface. And start peeling from the air pocket end. Ground coriander, brown mustard, mayo, garlic, onion, salt and pepper in your egg salad. You're welcome.
Kristen suggests avocado (oooooh!) and also says you don't HAVE to add something if your yolks are runny. Creme fraiche would be delicious. You could also try some plain yogurt (labneh or Greek yogurt would be best - or strain regular yogurt through a coffee filter or cheesecloth). Or sour cream. Or tahini. Lots of options! Thanks for watching
We're loving all your egg salad ideas -- kimchi, hummus, cilantro, leftover alfredo sauce, pickle brine -- wow! Keep 'em coming!
Egg salad needs mayo
and mustard. For a tasty variance I like a little curry and toasted slivers of almonds. My bridge clubs favorite.
This looks delicious, but I think I'd be inclined to try it with hard poached eggs rather than fried. That way I can get the pure "boiled egg and mayo" flavor of traditional egg salad without the hassle of peeling the shells.
To a certain extent, this would be helpful for those who have reduced manual dexterity due to arthritis, injury, etc.
I will definitely try this way this week.
In my egg salad I prefer scallions/green onions/ “échalottes” as we called them in Québec. I find that they are easier to digest - or fresh chives from the garden. You are my kind of egg salad maker.
I can’t wait to make this. I love egg salad. I grew up with an egg and olive salad sandwich which contained jarred green olives containing pimentos. Not sure how this combination would be made warm. I’m thinking I am going to love your recipe.
I add celery seed because I don’t like the texture of celery, but I do want the flavor.
If you are willing to put a bit a work up front, dried and powdered celery leaves are amazing in all types of dishes
I love capers in salads. Chicken, tuna and egg salads!
Love this recipe idea, thanks Kristen! I add chopped kalamata olives and cornichons to my egg salad. I feel like the add-on possibilities are endless for this one. Will try soon!
Sweet pickle relish and mustard -- for MY favorite ES ingredients.
Thank you, too many people suggesting dill pickles here. Sweet are a must! Either chopped or relish. And mustard of course. You must make good egg salad! :)
Made this for breakfast this morning. Love it❤️
I like to add smoked paprika, inspired by another situation where you have to spend too much time peeling eggs--deviled eggs.
Mustard, Mayo and dill pickles makes the best! French’s or spicy brown mustard, your choice. S&P to taste.
I use sliced sandwich pickles in mine and chop them up. I believe Bick's calls them "Yum Yum" pickles. It brings a touch of sweet and brine to the taste.
/this is my 2nd comment on an egg salad video

I really like dry mustard, green onion , celery and celery seed along with a squeeze of lemon in my egg salad!
this is one of the most genius recipes I've seen here! I can't wait to try it!!
Back in the 60's my dad had a drugstore that had the old style sandwich/soda bar and our egg salad had chopped black olives. To this day it's still my favorite. Try it.
I've had it that way! Serve on very soft white bread. *chef's kiss* Perfection!
What type of a pan are you using? Sliding that into the bowl was so satisfying.
My favorite egg salad is with Kefir cheese for that tart element and feta. I add raw garlic, lots of pepper and salt. I cook my eggs till the yolk is just barely all the way set....like 9 min. Fave egg salad add ons - sliced scallions, tiny cubes of pancetta fried up and squeeze of lemon ( plus mayo, salt and pepper of course)
Diced sweet onion, scallions, yellow mustard, cayenne, mayo. We make it pretty simple, but I'm excited to try this.
You are right! As I watched the scissor cutting technique I was thinking no way my pastry cutter would work a lot better.
I love to add very finely diced pickle (not relish). It gives a nice crunch and variation in texture from the soft egg.
I cannot wait to make this!!! Mayonnaise, Dijon mustard, curry powder & a dusting of smoked paprika 😋😍
I add chopped onions, pickles, black olives, parsley and pepper.
This looks amazing, I will definitely try it!
I love adding herbs (chives/scallions/dill), smoked paprika, cornichon/pickles, & a little Dijon mustard.
Yes to prepared mustard and add a little paprika to finish. Yum!
Mustard sweet pickles
Salt and pepper
Fresh fill.
OMG, soooo yummy. I wish I made this sooner.
i cant wait to try this....tanks for the share
I will sometimes add pickles, dill. Other times I'll add peas, carrots, and corn (sometimes fresh, sometimes frozen). My favorite way is way mom makes it with celery, potatoes, and mustard.
I like dill pickle relish in mine. this is a great idea. I'm doing to try it.
I haven't tried making this yet, but my family used golden mustard and red wine vinegar for our egg salad. I'm going to add capers, celery and either shallots or chives.
Spring onion and garlic granules are my go to
sliced green olives with pimento. I buy the small jars pre-sliced and add some of the brine too
I just made it tonight and it was wonderful.
Thanks
Can’t wait to try. Love the creamed carrots by Alex and Aki. Added thyme ...Wowza!
Egg salad ingredients
All Organic:
Egg, pasture raised by a local small farmer
Celery
Locally made organic pickle relish, like for hot dogs
Dill
Parsley
Avocado oil mayo
Mustard
Turmeric, just a bit
Lettuce, tomato
Sourdough bread, with some organic, grass fed pasture butter
Personally, I like some capers, too, but not my family. So I add a few just for my sandwich.
I don't add onions, but sometimes a little garlic powder. Onions just seems to turn it from salady to omeletty.

This sounds good. I love fried eggs
I made it with a lot of ham cut very small and diced onions. The onions got dark brown but we're great . This was very quick and easy.. I am thinking of trying it with the tamagoyaki to see how it goes with flavored scrambled eggs. No relish for that one
Missing Kristen in this series on Food52. Loved her content🙏
I add capers and fresh dill. Yum!
Bacon bits never disappoint when added to egg salad. I feel like its kinda breakfasts, but then I remember I’m a all day all night breakfast person.
Looks delicious!
This is utter brilliance!!!!
I love egg salad with celery, capers or olives.
I love chopped up pickles in mine. YUMMY!!!
I’m into this! Will add it to this week’s menu
I need to try this! Also I really enjoy this series.
a little sprinkle of roasted cumin powder and a spritz of lemon. ***chef's kiss***
Dill, celery, and spring onion or chives. I also use Miracle Whip because I’m weird.
Change out ham for salami. Add crushed red chili flakes to butter, salami and onions. Finish by adding chopped green oilive and tomatoes.
Miracle Whip for the sweet, Horseradish Mustard for the tang and the heat.
This for sure feels like something my lazy @$$ would have come up with in College... Not that this is a bad thing (at all.) Just feels like a big-lazy-brain discovery. I'll give this a shot.
Maybe your college self was a secret culinary genius? :) Thanks for watching, Julian! Let us know how it goes
I add sweet pickle relish and a little old bay seasoning
Add some dijon (about a third of the mayo amount)... also try a pinch of curry powder
The best part of hard steamed eggs is that they are so portable and don't need any packaging to take for lunch somewhere. They come in their own little protective jackets.
Looks delicious! I love chives and dill, along with diced onions and celery in my egg salad:)
Mayo and relish
Looks delicious! I’m a big fan of finely chopped cucumber and chives in my egg sandwich. Not a big fan of celery. Endless herb combinations. Also try half Mayo, half sour cream or yogurt.
A little bit of diced pickle and some juice along with celery seed.
I always add a bit of dijon mustard to egg salad.
You can make an easy substitution (and a faster, non-messy version you can teach to children) by substituting egg beaters and using a microwave.
Beautiful recipe!

Fresh dill, loads of black pepper, celery, and a little bit of mustard! So good!
yum!
Mayo, touch of mustard, and some sweet relish = delicious egg salad!
These are the mix-ins at our house. Spring onions or chives, celery, caraway seed, pickled red onion, capers, bean sprouts, Dijon, horseradish, Mayo, Spike Seasoning! Not all at the same time, just choose a few!
I am going to try this. But I think I wil use 2 knives instead of scissors to cut up the egg mixture.
Green olives and or capers!
German Style potato/egg salad is most commonly served warm. Blessings dean
I add dijon mustard, celery leaves, and onion powder (I don't like the taste of raw onion). I leave the egg very chunky, and only add in the yolks once I'm satisfied with the seasoning, so the yolks maintain some integrity and don't become just part of the mayonnaise mush.

capers and olives!
I bet those would be amazing in a potato salad or quick pickled with beets. Trying to think of how I could dye them for an Easter egg hunt.🤣
Pickled jalapenos are delicious with egg salad
I use the same olive oil!
girl, everyone in America does.
@Kristen Miglore Americans test kitchen winner
Egg salad for me, onion, celery, mustard and Mayo. I’m not convinced about eating warm egg salad. I think it’s the warm Mayo that has me dubious.
If you’re an egg yolk lover, try duck eggs. They’re almost all yolk which is why they’re hard to separate.
Garlic or garlic power and onion power (I'm not a fan of onions, but egg salad needs it) and definitely mustard
My egg salad requires a creamy note (usually mayo, but I've also used hummus and other dips), a pickle ingredient (either relish or something like pickled onions), and an herb of some kind (cilantro/coriander leaves are my favorite, but chives or spinach are also great).
Yes! I've done hummus too! Also avocado!
Hearts of celery.
That beep sounds like a wired, interconnected smoke detector, that needs to have the backup battery changed.
kinda wild but i like egg salad with boiled potato, sauerkraut and dijon mustard (mayo of course)

Ground coriander, brown mustard, mayo, garlic, onion, salt and pepper in your egg salad. You're welcome.
need an alt. to mayo - what do you suggest?

You could also try some plain yogurt (labneh or Greek yogurt would be best - or strain regular yogurt through a coffee filter or cheesecloth). Or sour cream. Or tahini. Lots of options! Mustard, pickle relish preferably dill, paprika or cayenne
first chicken egg alternatives to come to mind: ostrich, platypus
Thank you! You've just changed my life!! Capers and dill.
since you already have butter and fat from the ham in the eggs, I'd mix in sour cream instead of mayo. but, eat it the way you like.
I just love how chilled Food52/Kirsten is compared to other youtube foodies.
Alfalfa sprouts on top!
