This is a very interesting video. I was quite surprised that you got a gritty result with Siggi's, as mine has turned out very creamy and thick. I make my yogurt using an Instant Pot and Fairlife milk, which is already ultra-pasteurized and doesn't need to be boiled first. Maybe that's the difference between your Siggi's results and mine. UPDATE: The last 3 times I've used Siggi's, I've gotten the same gritty result that you mentioned. I wonder why the first few times were not like that. Years ago I switched from Chobani to Stonyfield Organic, which is local in New England, because Stonyfield has 6 active cultures: S. thermophilus, L. bulgaricus, L. acidophilus, Bifidus, L. paracasei, and L. rhamnosus. My supermarket hasn't stocked Stonyfield for quite some time due to supply chain problems, so that's why I tried the Siggi's (5 active cultures).
You’re not supposed to mix the way and the yogurt together before they are to the fridge even when you tipped them you started a different process eventually the whey and yogurt will make their way together in the refrigerator

No, you should always use plain yogurt as a starter.
I often use vanilla (not Greek) yogurt as my starter and I find no difference.

Have you tried yogurt starter?
Way too much starter was used. If you do some googling , you will see what flaws this causes
