    That looks delicious! Can you explain why you need to put the eggplant in cold water before cooking?

      I believe it’s to help keep the shape of the eggplant when cooking instead of it getting too mushy and breaking apart

      To stop browning and to remove slight tanginess.

      They are like apples. They oxidize when cut.
