Pork Trotter Red Curry with Pumpkin and violet Yam

  • Here is one comfort food to some people with good taste experiences. So favorable and tasty. Although takes time, but at the end your be rewarded with tasty cooking. Enjoy.

    3 pounds pork trotters
    5 cups water
    ½ cup rice wine
    3 slice ginger
    2 stalks green onions
    3 Tbs. cooking oil
    3 Tbs. crystallized sugar
    2 Tbs. rice wine for drizzling
    4 cups water
    2 Tbs. fermented red bean curd
    2 Tbs. red curry
    5 slices ginger
    2 stalks green onion
    3 Tbs. light soy sauce
    3 star anise
    1 cinnamon bark
    6 white cardamon seeds
    3 bay leaves
    5 oz. pumpkin, diced
    5 oz. violet (aka purple) yam, diced

    I don't eat pork, but this dish is very unique dish with the pumpkin and violet yam... Perfection🙂

    Yummy! Home cooking. Won't find this in a restaurant.
    I grow that violet/purple yam it gets big! Have to wait till the vine dies back to harvest.

    Very nice dish Chef. It's like a Chinese stew. By the way, what is pork trotter? How often is it used in Chinese cookings? For a moment, I thought it was chicken thighs before I saw the caption. If you remember about 3 weeks ago, I bought a package of frozen stir fry vegetables at Costco and I tried it yesterday. It wasn't that bad. Although the package says, stir fry them 7-8 minutes, I narrow it down to 5 minutes cuz I cook them in small portions of 3. Once everything was cooked, I combine them all added oyster sauce, cooking wine, fish sauce and dark soy sauce. Although I use fresh vegetables and score myself a 10, I would give this frozen package a 7.5 out of 10 so it worked out. I would buy again but only at reduced price. It's always great to try and experiment new things. If it works out, it's fine. If not, at least I did not pay full price for it. Until next week Chef, keep "wok"ing.

      Pork Trotter they name by the Englishman. AKA pig feet. They are popular cut for braising with soy sauce and crystalized sugar. I am not fun of stir frying veggie that previously been frozen. It turn soggy and I like fresh one that still retain crunchy when bite. Thanks for watching

    Read an article in the NYP about the city's plan to place a jail in Chinatown. I wrote to the mayor. Between 9// and the pandemic, this doesn't bode well. I love Chinatown, can you show support for a place that's near and dear to us? Thanks!
