I worked in the kitchen for Chilis for 7 years back in the 80's. This was back when everything was made from scratch. Your recipe is very close. We made the chili in a huge pot that was big enough for a grown man to get in. At the end of each night we would throw all the burgers we didnt serve that night into the pot. By the end of the week was when the chili was best. Brings back a lot of memories! Thanks!

You can't beat Zwillings Knifes , I got a 14 pc set almost 30 yrs ago . What a fantastic knife , I do my own sharpening by hand with a whetstone really they only need a tuneup by stone like once a year , just a few swipes with the honing steel is all you need in between. Oh an they NEVER get put in the dishwasher , that just beats the heck outta them . I carry a Mora Companion on my hip just about all the time , it's maybe 20 yrs old itself a great lil knife for day in an day out usage .

I was a cook for Chilis . I left in 2019. Now this may be one of their original recipes 20+ years ago, the chili they use now comes in a bag frozen from the headquarters. I can reassure you there is no chunky onion or anything in it it’s very Hormel like, lol
Yes, definitely the trend with chain restaurants, is the longer they exist the more and more food comes prepackaged from their Main Commissary. It's a method of product consistency and cost control.
I'm perhaps the only person who prefers the current Chili's chili recipe. Do you have that one? It has chunks of ground beef. I was waiting for a bowl once, and the waiter told me the chili was ready, but the cook was just "adding the burger."

I've always loved their chili. I haven't had it in several years, but it is the closest thing to a real Bowl of Red you can get in a chain restaurant.
