我們用來煮叻沙的姜花是一種特別的姜花，叫做火炬姜花，是馬來西亞的特產 （但雲南有引入培植）。因為南洋或馬來西亞料理常常用到，所以一般在這邊的菜市場買到。但香港的話很少當食材來用所以街市很少入貨（除非是賣泰國菜的雜貨舖）。但其實這個火炬姜花盛開時是很美的觀賞花，可以試試去花店看能不能買到它還沒有開花的花球（這個花球就是食材） 🙂
