- Rick Martinez is back in the Test Kitchen to make double-pork carnitas with corn tortillas and green pico de gallo. That's right, these carnitas use two kinds of pork (shoulder and belly) because one is definitely not enough.

First time watching a video with Rick and I really enjoyed it. Love his aesthetic and level-headed straightforward cooking style. My only complaint is that the test kitchen seemed kind of empty and sad; I love the lively atmosphere these videos usually have, seemed liked they filmed it on a Friday after everyone left.
Either way, great video! I'd love to see more!
Someone mentioned that it was cozy to them. Winter nights when it's getting late, everyone is leaving for the day, you're still hard at work because you love your job so much. I thought it was nice interpretation and so that's how I see it, as cozy! :)

@@billypilgrim1 depends on where they're from. The cusine from northern and southern Mexico can differ vastly.
@@camlock6319 Mmm I've seen cabbage in fish tacos in Sinaloa and Baja but I'm pretty sure that stems from US influence. Carnitas, which is traditionally from central Mexico, does not.

Pedantic botany correction! Tomatoes and tomatillos (and husk cherries) are in the Solanaceae family, so they actually are related! Meanwhile, gooseberries are in a completely different family, Grossulariaceae.

I love this. thank you, Rick. Making it for our party tonight. It's my friends birthday party. His birthday was on the 4th and it is the 12th now but nobody would be able to come if we had the party on the 4th because most people spend the 4th with their families because they have barbeques and whatnot. Personally, I'm feeling a little down on America, but if you want to celebrate, Go for it. Anyway, Rick, looking forward to tonight. Going to make some delish food. I will let you know how the party goes and how the dish is received. Best, Max Addendum, We are actually going to make the pico at 7, because guests will be coming over at 8 and I don't want it to get soggy. So yeah, the fresher - the better!
I just made this for my friends today and they all loved it!! Thank you so much for bringing home a taste of Mexico here in the U.K! I switched out the pico for mango habanero just for some more spice. It was messy but so worth it!!

@@skibbz0r If you like it then eat it. Some people prefer it more 'authentic' but we all have different tastes.
What you should have said was “on behalf of Mexico, you’re welcome”. My god that looks good. I grew up in a very multicultural area and was on a mostly Mexican-American little league team. A friend’s mom made carnitas (among other wonderful things) and though there is lots of good carnitas where I live none has been as good as home made.
i enjoy authentic ones without it, but light Sour cream goes great on a chorizo taco
@@skibbz0r didnt say it's bad, it just ain't the real thing, it became texmex thing, also cheese isn't used.. but you know y'all can add ketchup on it for what I care but that's not the authentic taco

just a quick tip if you don't have a tortilla press, you can use two plates pressing with the bottoms to make your tortillas and it works just as well. It's what I have done in desperate times!
When I get to a kitchen I'm going to paint my nails and make this. I love carnitas

I have used this recipe many times. It is our go to Christmas Eve meal. Very simple to make, but with lots of flavour.

Tortillas made my mouth water. Takes me back to eating a tortilla right off the stack when had to go to the tortillería to buy the tortillas (every other day) . They would take your soaked maíz, ground it up to masa, and put it through a machine that spit formed and pre-cooked tortillas on the other side. They made on ‘em on the spot. Handy when your family, mostly the boys, went through dozens a day. Tortillas you get nowadays from the store can’t compete on any planet. But, they’re “ok” since I’m not about to make my own now. Ain’t no one has the time.
I don’t eat meat but I will try the carnitas this way next time I make ‘em for the fam. I think they will love and less babysitting them on my part the way I make them now.
Looks amazing! I've never liked corn tortillas; mainly due to the texture, but the lack of flavor is an issue, as well. Of course, I've never had "real" corn tortillas, either. I think these would be fun to make with my daughter, actually. Challenge accepted!

Yah much love for carnitas! I usually take the shoulder in my instapot for 1:30 with jalapenos and onions and 1 cup chicken broth, take it out and then fry in a pan with the juice in the pot. Always a winner! Now...just to get on those fresh tortillas! Once you go fresh, you'll never want store-bought again.

Every week, along with a few other grad students, we have what we call "taco time", where we make fresh tortillas for lunch and everyone brings taco fillings. It's one of the best parts of my Monday every single week.

Great recipe! Except for the cilantro. Cilantro tastes like soap to me, unfortunately.
But wait -- are you actually using _culantro_ instead? I've heard that culantro -- Mexican coriander -- doesn't have the same soapy-tasting effect.
same thing - coriander and cilantro are the same plant.
I was gonna say cilantro is Spanish for coriander. Culantro is a more intense flavor.
You can skip that part cause I hate it too
i've heard that some people that don't like cilantro think rau ram or culantro taste okay. they are similar flavor herbs, but usually harder to find in most areas. i think they all taste nice.
