      Tbh , this recipe is so much easier than the others I’ve seen in regards to the sugar cooking.

    There’s different ways of making this, and this way is the best way! Just how my mom makes it, by heating up sugar and caramelizing the pork in it and then adding the other recipes. I also add a bit of chicken powder. Recommended by my mother of course.

    One minor tip: cook the pork first by boiling it then straining so you won’t need to remove the ‘foam / impurities’ later

      While the sugar is REALLY hot, if you add water it can splash everywhere and if it lands on your skin, your looking at some crazy burns. That’s why u add it in a teeny bit at a time, plus if you add water with the sugar from the start it takes longer that’s all.

      Yes, you can just use water and add more sugar if needed to adjust the taste.

      No, it’s not brown sugar. I used a type of white granulated sugar which is slightly less refined, hence the slightly yellow color. Regular white sugar will work great too 👍.

      @@thuphuongvo9783 You can use raw (turbinado) sugar. That's the brown/tan color. It is not the same as brown sugar, which has molasses.

    When you sauté the pork with the sauce what heat do you turn it to and do you put pork or sauce first, and do you let the pan come up to heat first?

      I heat the pot over medium heat first, and then add some oil. Once the oil is hot, you can add the pork belly (along with all the garlic and shallot) and then the caramel sauce. Then you can stir and cook. I hope this helps.
